Spicy Chilaquiles – a fun take on a classic dish! Homemade enchilada sauce is combined with your favorite tortilla chips and then topped with fried eggs and your favorite toppings! So easy and delicious!
I feel like it has been FOREVER since I’ve posted an easy Mexican food recipe! This one is a classic with a twist: Spicy Chilaquiles! While I have tweaked it to make it my own, it has many of the classic attributes of the delicious Mexican dish!
What is Chilaquiles?
Chilaquiles is a traditional dish that originated in Mexico. The base of it is fried corn tortilla chips, the chips are mixed with either red or green salsa and simmered until everything begins to get soft and flavorful. You can top it with whatever you’d like – however, lots of people garnish with a delicious fried egg! This makes it an excellent breakfast/brunch recipe!
I decided to stray a little bit from the classic recipe in that I didn’t end up frying or making my own tortilla chips! Instead, I used Beanfields! These are literally some of my all time favorite chips. I’ve featured them before in recipes like my Loaded Baked Chicken Nachos, Creamy Salsa Verde Guacamole and my Cheesy Enchilada Stuffed Sweet Potatoes!
I also made this version a little bit extra spicy! I made a homemade red enchilada type sauce that has both jalapeno, chipotle pepper and tons of spices in it! I absolutely LOVE this homemade sauce. It’s an easy one – a quick blitz everything in the food processor sauce and you’re set!
However don’t worry about the spice! This recipe is VERY adaptable and you can really choose yourself how spicy you want to make it. Plus, with all of the amazing topping options, you can easily help balance the spice out with something like tangy sour cream or creamy cotija cheese.
I personally love having the fried egg on top! The yolky center blends in perfectly with the spicy red sauce and makes it just the perfect brunch food.
Let’s get into how to make this super easy dish!
Ingredients You Need for Spicy Chilaquiles:
- your favorite tortilla chips (homemade or store-bought)
- whole peeled tomatoes
- fresh garlic
- red onion onion
- jalapeno
- chipotle pepper in adobo sauce
- water (for the sauce)
- spices like: cumin, chili powder, smoked paprika, salt and pepper
- eggs
- cotija cheese
- avocado
- radishes
How to Make Spicy Chilaquiles:
Drain two 14 oz. cans of whole peeled tomatoes. Add these to your food processor. Roughly chop ½ of a medium red onion and 4 cloves of garlic. De-seed one jalapeno and roughly chop this as well. Add all of these ingredients to the food processor. Lastly, add one whole chipotle pepper in adobo sauce to the food processor (feel free to de-seed this pepper as well!)
Add in all of the delicious spices next like: cumin, chili powder, smoked paprika and salt and pepper. Last but not least, add about 1/2 cup of water.
Pulse this in the food processor until it’s super smooth and the transfer it to a large skillet. Turn the skillet up to medium heat and let the sauce warm/simmer for about 3-4 minutes.
Meanwhile, in another pan, if desired, fry eggs! Add butter and fry the eggs until the edges turn completely white and the yolk remains runny!
Once the red sauce has been heated up, remove from the heat and gently add in your tortilla chips (I used about 8 or so oz of a bag of chips). Mix until the sauce has covered the chips generously.
And now, you’re all set! Gently add your fried eggs to the top and garnish with your favorite toppings! For me, that was diced red onion, avocado, cotija cheese and delicious fresh radishes! Eat while warm and enjoy every bite!

Ingredients
Homemade Red Enchilada Sauce
- 2 14 oz. cans of whole peeled tomatoes, drained

- 1 de-seeded jalapeno, roughly chopped
- 1 chipotle pepper in adobo sauce, roughly chopped
- 2 tbsp chili powder
- 2 tbsp cumin
- 1 tbsp smoked paprika
- 1/2 tsp salt
- 1/2 cup water (more if needed/desired to thin out the sauce)
Chilaquiles + Toppings
- 8-10 oz. tortilla chips
- 2 eggs, fried
- 1 avocado, sliced
- 1/2 red onion, diced
- 1-2 radishes, sliced
- 1/4 cup crumbled cotija cheese
Instructions

To your food processor, add the two cans of drained whole peeled tomatoes. Roughly chop the onion and garlic as well as de-seed your jalapeño and add those to the food processor. In addition, add one whole chipotle pepper (de-seed if desired)

Next, add in all of the delicious spices next like: cumin, chili powder, smoked paprika and salt and pepper. Last but not least, add the water.
