You guys! Happy strawberry season. Have I been waiting for this since the last strawberry season ended?! Yes.
Sadly, I haven’t been able to make it over to our local strawberry farm to pick fresh strawberries BUT thankfully the grocery store is stocked up with yummy strawberries! They’re so sweet, almost like candy!
To me, I love all things chocolate – I mean, hello fudgy brownie cookies! But there is truly nothing like a fruity dessert with either ice cream or whipped cream on top. It’s the pinnacle of Summer and deliciousness!
Why You’ll Love these Bars:
First off, you have 2 thick layers on the bottom and the top. Made with salted butter, whole wheat flour and sugar…how can you go wrong?!? They’re not overly sweet and have a lovely subtle nutty flavor thanks to the whole wheat flour.
Sandwiched in between the delicious crust is those fresh gooey strawberries.
WARM, GOOEY STRAWBERRIES, y’all. I rest my case.
Just kidding! But really, need I say more?!
The natural sweetness really shines through in this dessert – as well as the slight tartness of the berries. The crisp buttery crust. The cold vanilla ice cream with the warmth of the dessert.
You just truly can’t go wrong with this goodness! So let’s get into what you need to make it!
Ingredients You Need:
- Strawberries
- Whole Wheat Flour
- Salted Butter
- Brown Sugar
- Granulated Sugar
- Cinnamon
- Baking Powder
- Salt
- Egg
- Lemon Juice
- Vanilla Ice Cream or Whipped Cream
Best Baking Tips:
First, and I feel like I always recommend this – but go ahead and preheat the oven to 375 degrees F. That way it’s all ready to go when it’s ready to pop in!
Next, start working on that crust! I highly recommend a pastry cutter for this part – you’re going to want to “cut” the cold butter into the whole wheat flour. Buying a pastry cutter was a game changer for me when it comes to baked goods – especially because they aren’t even that expensive!
So…I sliced my COLD butter into thick slices and then “cut” it into the butter until the butter was fully incorporated and it was in pea-like size balls. Here’s a picture for reference:
Next, you want to take a lightly beaten egg and add it into the crust mixture with your HANDS. You want to add the egg to help bind it all together. It might look a little weird – but try as best you can to incorporate the egg into the crust.
Grease your 9×13 glass baking dish with baking spray or butter. Then add in ⅔ of the crust mixture to the bottom and gently but firmly press down to make the crust – making sure it’s evenly distributed throughout the pan.
Slice and dice those strawberries next! Add them to a bowl with a few other ingredients, mix together and then place right on top of the crust.
Add the last ⅓ bit of the crust on top of the strawberries and press down to cover.
Time to bake it up! And yes, your house will smell like a delicious buttery strawberry candle. You’re welcome 😉
Once it’s all done, be sure to let it cool for at least 15-20minutes (if not longer lol!) before you slice into it.

Storing Leftovers:
Cover these bars tightly in tupperware and then keep them at room temperature. They are best eaten between 1-2 days but they last for probably around 3 days.
Be sure to warm it up in the microwave for ultra yumminess! Enjoy!

Strawberry Cobbler Bars
These Strawberry Cobbler Bars are SO delicious. Perfect for Summer evening desserts, these bars are loaded with fresh strawberries sandwiched in between the perfectly sweet whole wheat crust. Top with vanilla ice cream and you’re all set!
Ingredients
Crust Ingredients
- 3 cups whole wheat flour
- 3/4 cup granulated sugar
- 1 cup (2 sticks) salted butter, cold and diced into chunks
- 1 tsp baking powder
- 1 egg gently beaten
- 1/4 tsp salt
Filling
- 6 cups freshly diced strawberries
- 1 tbsp lemon juice
- 1/2 cup whole wheat flour
- 1/2 cup granulated sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
Toppings
- vanilla ice cream or whipped cream (both optional but highly recommended)
Instructions

Preheat the oven to 375. Take a medium size bowl and add in the whole wheat flour. To this, add the granulated sugar, baking powder and a pinch of salt. Mix this to combine. Next, add 2 sticks of COLD salted butter diced into chunks.

Using either a pastry cutter or your hands “cut” the butter into the flour mixture. This basically requires you constantly mixing/kneading it, making sure the butter is incorporated thoroughly and evenly in the flour. See photo in blog post for reference!

Once it has a “pea” like coarse crumble consistency, gently fold into a lightly beaten egg using your hands! This will make sure that the crust thickens and doesn't fall apart.

Next, grease a 9x13 baking dish. To the bottom, add about ⅔ of the crust mixture. Firmly press it down to form the crust. Set this aside.

Dice the strawberries into small bite size pieces. Add these strawberries to a fresh bowl and also add ½ cup of whole wheat flour, sugar, lemon juice, salt and cinnamon! Mix this all together and put this directly on top of your crust. Spread it out evenly!

Lastly, use the last ⅓ of your crust mixture and sprinkle it on top of the peaches! Feel free to gently press it into the peaches to make sure it sets. Bake for 45 minutes or until the top turns a golden brown.

Let bars cool completely before you cut into them. This yields 9 large bars or you could cut them smaller for more servings. Enjoy with a scoop of ice cream or whipped cream!
