White Chocolate Blueberry Granola

This White Chocolate Blueberry Granola is loaded with wholesome oats, crunchy chia seeds, dried blueberries and of course, melty white chocolate! It’s the perfect healthy-ish treat for breakfast, a snack or dessert!

Ingredients

  • 3 cups rolled oats
  • 1/4 cup white sugar
  • 1/2 cup white chocolate chips
  • 1/4 cup chia seeds
  • 1 tsp vanilla extract
  • 1/2 stick melted butter
  • 1/4 cup honey
  • 1/3 cup dried blueberries

Instructions

  1. Preheat your oven to 300 degrees. In a large bowl, combine your oats, vanilla extract, white sugar, chia seeds, and dried blueberries. Mix together to combine. Add in your melted melted butter and honey and mix until it's fully coated.

  2. Add this mixture in a single layer to a large baking sheet. Bake for 25 minutes, leaving the granola untouched. Once the 25 minutes are done, take it out and add 1/4 cup of the white chocolate chips. Mix in to the granola gently. Bake for an additional 3-5 minutes. 

  3. Once done, take the baking sheet out of the oven. While it's cooling on the pan, add the other 1/4 cup of white chocolate chips on top. Let this mixture cool for about 10 minutes. Eat with cereal, top yogurt bowls or just eat this by the handful as a snack! Store in a tightly sealed jar at room temperature for 1 week.
