Spicy Chilaquiles - a fun take on a classic dish! Homemade enchilada sauce is combined with your favorite tortilla chips and then topped with fried eggs and your favorite toppings! So easy and delicious!
To your food processor, add the two cans of drained whole peeled tomatoes. Roughly chop the onion and garlic as well as de-seed your jalapeño and add those to the food processor. In addition, add one whole chipotle pepper (de-seed if desired)
Next, add in all of the delicious spices next like: cumin, chili powder, smoked paprika and salt and pepper. Last but not least, add the water.
Pulse this in the food processor until it’s super smooth and the transfer it to a large skillet. Turn the skillet up to medium heat and let the sauce warm/simmer for about 3-4 minutes.
Meanwhile, in another pan, if desired, fry the eggs! Add butter and fry the eggs until the edges turn completely white and the yolk remains runny! Add salt and pepper to taste.
Once the red sauce has been heated up, remove from the heat and gently add in your tortilla chips. Mix until the sauce has covered the chips generously.
Gently add your fried eggs on top of the chips/sauce and garnish with your favorite toppings like avocado, cotija cheese, fresh radishes and red onion! Enjoy while warm!
