Add the oats, chia seeds, peanut butter, honey, vanilla extract, salt and protein powder into your food processor.
Pulse until they are all combined and can be easily rolled into balls. If the mixture is falling apart, add more peanut butter or honey until it’s stickier. I found that the above measurements worked for me!
Roll into small one or two bite size balls. Place on a baking sheet and into the freezer. Freeze for about 30 minutes. Eat up! Store in refrigerator.
