Everything Bagel Breakfast Sandwich

This Everything Bagel Breakfast Sandwich are loaded with scallion cream cheese, fresh avocado, your favorite greens and of course - a buttery fried egg! Delicious, satisfying and SO easy!

Ingredients

  • 1 toasted everything bagel
  • 2-4 oz softened, full fat cream cheese
  • 1-2 small stalks of scallions
  • a handful of spinach
  • 1/4 of a small red onion, diced
  • 1/2 avocado, sliced
  • 1 fried egg
  • 1/2 tbsp salted butter
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions

  1. Toast the everything bagel. While it's toasting, dice the scallions and mix them into the softened cream cheese. For added flavor, add 1 tsp garlic powder and salt and pepper to taste. Mix well to combine. Slice the avocado and dice the red onions. Set aside. 

  2. In a non-stick pan, melt 1/2 tbsp of butter on medium heat. Crack one egg into it and sprinkle with salt and pepper to taste. Cook for 2-ish minutes, or until desired result. I prefer the egg whites fully cooked and the yolk runny. 

  3. Now that the bagel is toasted, schmear both sides with your cream cheese. Add a handful of spinach on the bottom half, as well as the fried egg. On the other half of the bagel, add the avocado and the red onion. Add salt and pepper to taste if desired. Enjoy while hot!
