These Cinnamon Roll Overnight Oats are vegan, filled with cinnamon roll flavor, have a easy icing glaze and are the easiest breakfast to meal prep!
Add oats, cinnamon, brown sugar and vanilla extract to a mason jar. Mix until combined. Add your non-dairy milk and mix together. Place in fridge for at least two hours but preferably overnight.
With the glaze, add your powdered sugar and water (or milk) to a small bowl. Mix until smooth glaze forms - adding more powdered sugar and/or water if need be depending on how thick/thin you prefer yours! Add to oats AFTER they are done soaking overnight.
Pour into a bowl (or eat it from the mason jar!) and enjoy!
