  • 8 oz. thawed and drained frozen spinach
  • 1 13.75 oz can of marinated and drained artichoke quarters, diced to preferred bite size
  • 1/2 cup sour cream
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded mozarella cheese
  • 1 8 oz. block of softened cream cheese
  • 4 large cloves minced garlic
  • 1/2 tsp salt (add more if needed)
  • 1/2 tsp pepper (add more if needed)
  • tortilla chips, crackers or pita to serve

  1. Preheat your oven to 350 degrees. Mince your garlic. Drain your artichokes and then dice them into small bite size pieces. Place them in a large bowl. In the same bowl, place your thawed and drained spinach, softened cream cheese, parmesan cheese, mozzarella cheese, garlic and salt and pepper. Mix together to combine well.

  2. Grease a medium sized baking dish, add the mixture and spread it evenly. Bake for 30-35 minutes or until golden brown and bubbly. May broil for 1-2 minutes at the end for desired crispy top. Keep a watch on it though!

  3. Serve warm with chips or pita! Enjoy!

Recipe Notes

If your spinach isn't thawed and drained, no worries! Simply place 8 oz. of frozen spinach in a microwave safe bowl. Microwave for 2 minutes. Once done, add to a sifter and press out the excess liquid with a spoon. Add the drained spinach to the bowl with the other ingredients! Voila!
