Chunky Coconut Granola

This Chunky Coconut Granola is made with no refined sugar and coconut goodness! With its huge chunks and subtle sweetness it will be hard to stick to the serving size with this batch of granola!

  • 2.5 cups rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 2 tbsp coconut sugar
  • 2 tbsp coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup chopped almonds (optional but add a great crunch)


  1. Preheat oven to 300 degrees. Mix all of the ingredients above in a large bowl until combined. Pour it onto a baking sheet and spread it out thinly. 

  2. Bake for 15 minutes. Check the granola but Do NOT mix it while in the oven. This will make the granola lose the chunks. 

  3. Turn up the heat to 325 and bake for an additional 5-7 minutes, or until golden brown. It should come out of the oven as one large sheet of granola. Once done, let the granola cool - still not mixing it. Once cooled slightly, break it into large chunks. Enjoy! Shelf life: around 1 week.
