Healthy Sweet Potato Casserole with Maple Walnut Oat Topping

This Healthy Sweet Potato Casserole with Maple Walnut Oat Topping is filled with freshly baked sweet potatoes, maple syrup, cinnamon, sea salt and all topped with delicious oatmeal mixture of walnuts, cinnamon, nutmeg and best of all: maple syrup!

Ingredients

  • 2 lbs fresh sweet potatoes
  • 1/4 cup unsweetened almond milk
  • 1/3 cup walnuts
  • 1 cup quick oats
  • 2 tbsp flour
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup 100% pure maple syrup
  • 1/2 tsp salt
  • 1 egg
  • 2 tbsps butter
  • 1/2 cup mini marshmallows

Instructions

For the sweet potatoes

  1. Wrap 2 lbs. (roughly 3 large sweet potatoes) in aluminum foil and bake at 425 for 1 hour or until fork tender. 

  2. Once done, unwrap and let cool. Peel skin off of potatoes. 

  3. Put potatoes in a bowl. Mash them up. 

  4. Add 1/4 cup of almond milk. 

  5. Add 1 egg.

  6. Add 1 teaspoon cinnamon, 1/4 teaspoon salt, 1/4 teaspoon of nutmeg, 1 heaping tablespoon of maple syrup, and 2 tablespoons of melted better. Mix together well. 

For the Oat Topping

  1. Combine 1/3 cup of roughly chopped walnuts with 1 cup of oats and 2 tablespoons of flour.

  2. Add in 1 teaspoon of cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon of salt. Mix all together! 

  3. Lastly, pour in 1/4 cup of pure maple syrup. Mix together very well so the stickiness of the maple syrup coats all of the ingredients. 

Casserole Assembly

  1. Preheat oven to 350 degrees. Butter a casserole dish. 

  2. Scoop in the sweet potato mixture. 

  3. Pour oat mixture on top and press down slightly. Lastly, pour 1/2 cup of mini marshmallows over the top of the casserole. 

  4. Place in the oven and let it bake for 30 minutes. 

  5. Best served while warm!
