Preheat oven to 350 degrees. Cut the chicken breast into tenders (should make 6+ medium tenders) Mix the almond flour, panko breadcrumbs, salt, pepper, garlic powder, oregano, cayenne together with a fork in a bowl.
Mix two eggs together with 1 tbsp of milk in a bowl. Have a baking sheet with parchment paper or foil prepared. I used a silicon mat and it worked amazing!
Begin by lightly coat the chicken tender in the flour mixture. Transfer it to the egg and coat. Coat an additional time with the flour mixture and place on the baking sheet. Continue until all are done.
Bake for 25 minutes. Once done baking, place them on broil for 2-3 minutes, watching closely to make sure they don't burn, for that golden brown, crispy and crunchy goodness.
To make the ranch, whisk together the milk and mayo. Start off with adding 1/4 tsp of each of the spices listed above and add more if desired. I added lots of hot sauce to mine to make it extra spicy!
Serve immediately and enjoy!
Depending on how big your chicken breast is, you may need to adjust the ratio of breadcrumbs from 3/4 cup to 1 full cup.
