Peach Crisp Filling

  • 6-7 medium ripe but firm peaches, cut into long thin slices (about 4 cups worth)
  • 2 tbsp all purpose flour
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 4 tbsp maple syrup
  • 1 tbsp fresh squeezed lemon juice
  • 1/4 tsp salt

Peach Crisp Topping

  • 1/2 cup whole wheat flour
  • 4 tbsp cold butter, diced into cubes
  • 1 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 2 tbsp maple syrup
  • Vanilla ice cream for topping

  1. Preheat oven to 350 degrees. Grease a 9 inch round baking dish with butter or cooking spray.

  2. Take the peaches, wash them and then slice them into long slices. If desired, you can peel them but I like to keep the peel on.

  3. Add these gently to a bowl. To the bowl, add in the all purpose flour, brown sugar, cinnamon, salt, lemon juice and maple syrup. Stir gently to combine.

  4. Add the peaches to the greased baking dish.

  5. Wipe out the bowl you just mixed the peaches in and then add the ingredients for the crisp topping (don't add the butter yet though!). Mix the ingredients up.

  6. Chop the COLD butter into small pieces and add to the bowl. Use a pastry cutter and cut the butter into the dry ingredients until it looks like pea size crumbles. Add the last splash of maple syrup and stir.

  7. Spread the crumble topping evenly on top of the peaches in the baking dish.

  8. Bake for 30-35 minutes. If desired for an extra golden topping, broil for 1-2 minutes - just make sure to watch it carefully to make sure it doesn't burn.

  9. Let cool for several minutes and then garnish with vanilla ice cream. Enjoy!

Recipe Notes

If you don't have a pastry cutter, add the crisp topping ingredients into the bowl and using your hands, work in the butter until it resembles a crisp topping - the butter should be pea sized by the time it's done.
