This Fizzy Watermelon Paloma is my new go-to beverage! It’s so refreshing and feels like Summer in a glass!
Add chunks of watermelon to a high powered blender. Blend until it becomes juice. Then strain it through a mesh strainer into a jar. Set aside.
Coat the rim of the glass using a lime wedge and then dip the rim in salt (or sugar!)
Add crushed ice to the glass, followed by about 1/2 cup of the watermelon juice. Add 2 oz of tequila and 1/2 of a lime and simple syrup. Mix together with a cocktail spoon. Taste and adjust seasoning - if you want it sweeter, add more syrup, more tart add more lime etc.
Top with fizzy lime seltzer and garnish with mint. Enjoy!
To make homemade simple syrup, add 1 cup of water and 1 cup of sugar to a pot on the stove on medium heat - stir and cook until the sugar dissolves into the water - it shouldn't take long at all!
Store the watermelon juice leftovers in a tightly sealed jar in the fridge for 1-2 days.
