Chocolate Peanut Butter Granola Bars

Ingredients

  • 3 cups rolled oats
  • 1 cup Rice Krispies 
  • 1/2 cup creamy peanut butter 
  • 1/2 cup honey
  • 1/4 cup chopped roasted peanuts 
  • 1/4 cup shredded sweetened coconut 
  • 1/3 cup chocolate chips, melted 

Instructions

  1. Add the oats, rice krispies, sweetened coconut and chopped roasted peanuts to a bowl. Mix together. 

  2. In a small bowl, melt together the honey and peanut butter until combined - about 30 seconds to 1 minute in the microwave.

  3. Pour the melted peanut butter/honey mixture into the oat mixture. Stir until combined and each ingredient is coated.

  4. Spray an 8x8 glass baking dish with cooking spray. Press the granola bar mixture evenly into the pan - you may need to spray your hands with cooking spray to do this properly (since the mixture is so sticky!)

  5. Place in freezer for 30 minutes.

  6. When the 30 minutes is up, melt chocolate. Slice the bars into however big or small you want them. Generously drizzle or dip them in the melted chocolate. Garnish with flaky sea salt, coconut flakes or roasted peanuts. Enjoy!

  7. Store in tightly sealed tupperware container in fridge for up to 4 days.
