Carrot Cake Oatmeal

This Carrot Cake Oatmeal is loaded with everything you love about the classic dessert! Fresh carrots, pecans, coconuts and an ultra creamy base of oatmeal. Pair with a mug of fresh coffee and you’re all set for a wonderful morning!

  • 1 and 1/4 cup rolled, old fashioned oats 
  • 1 cup freshly shredded carrots 
  • 2 cups milk of your choice (I have used whole milk or oat milk)
  • 3 tbsp maple syrup (or more if you like it sweeter!)
  • 1 tsp vanilla extract 
  • 1/2 tsp cinnamon 
  • 1/4 tsp ground ginger
  • 1/8 tsp ground allspice 
  • 1/8 tsp ground nutmeg


  • 1/4 cup roughly chopped pecans 
  • 1/4 cup shredded unsweetened coconut 


  1. If possible, freshly shred the carrots! Add these to a medium size pot.

  2. To the same pot, add in the oats, milk, maple syrup, spices and vanilla extract to the bowl. Mix together with a large wooden spoon and let it come to a gentle boil.

  3. Once boiling, reduce heat to medium low and cook for 5-7 minutes, stirring occasionally until desired thickness is achieved. 

  4. If it's too thick, add a splash of milk to get your desired oatmeal consistency.

  5. Divide the oatmeal into 2 bowls and garnish with pecans, shredded coconut and extra carrots! Enjoy!
