Begin by making the homemade BBQ sauce. Combine all of the sauce ingredients in a bowl and mix until combined. Adjust seasonings if needed (if it’s too tangy, add more ketchup - not vinegary enough? Add more ACV) and set this aside.
Slice the pineapple and red onion into slices to fit your burger bun as well as any other toppings you may enjoy.
In a large bowl, combine your beef, minced garlic, salt, pepper and a couple tbsp of the bbq sauce and mix together. Form three slightly thin ⅓ lb patties and set these aside.
In a large cast iron skillet, fry the bacon until your desired crispiness is achieved. Once done, place on a plate with a paper towel to help get the extra grease off. Set aside.
Pour out most of the bacon grease in the cast iron skillet and once your pan is hot, add in your burgers! Cook them on one side for about 3-4 minutes and then flip and do the same on the other side for an additional 3-4 minutes. Basically, cook until desired “done-ness” is achieved - I cooked mine until the internal temp was about 170 degrees, which is about medium well.
Once it’s cooked through, add your cheese on top of the burger and place a lid on it to make sure the cheese is fully melted!
Toast your brioche buns (if desired), spread a generous amount of the BBQ sauce on the top bun. Place your burger patty on the bottom bun. Add your slice of pineapple on top of the burger as well as the bacon. On the top bun, add sliced red onions.
Place it all together and get ready for probably the messiest but most delicious burger of your life. Have several napkins ready. Enjoy with potato chips, french fries and/or a cold beer!
