Heirloom Tomato Tart

  • 1 sheet puff pastry, thawed
  • 1/2 cup feta cheese
  • 1 lb (or about 3-4 medium heirloom tomatoes)
  • 1 tsp olive oil
  • salt and pepper to taste
  • fresh basil leaves (garnish, optional)

Basil Sauce

  • 1.5 heaping cups of fresh basil leaves
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 tsp salt


  1. Preheat the oven to 400. Add parchment paper to a baking sheet (if your puff pastry doesn't already come with it) and roll out your puff pastry. Poke generously with a fork all over the puff pastry. Place in the oven and bake for 12-15 minutes, checking on it every once in a while.

  2. While the pastry is baking, thinly slice the tomatoes. Mince the garlic. Set aside.

  3. Once the puff pastry is done "par-baking", arrange and layer the heirloom tomatoes on top of it. Drizzle with 1 tsp of olive oil and a generous pinch of salt and pepper. Place back in the oven for an additional 15-20 minutes or until golden brown.

  4. While the pastry is baking the second time, whip up the basil sauce! To a food processor or blender, add the fresh basil, minced garlic, olive oil and salt. Pulse until it's blended into a sauce.

  5. Once done baking, remove tart from the oven. Sprinkle generously with feta cheese and fresh basil leaves. Dollop the basil sauce on top if desired or use it as a dipping sauce. Eat warm or at room temperature! Enjoy!
