These Ground Chicken Tacos are the perfect weeknight meal! Smoky ground chicken balanced out with tangy chipotle crema. Pair it with corn tortillas and lots of toppings and you’re all set!
Begin to chopping all of the veggies. So, mince your garlic, slice the red onion and de-seed and dice the jalapeno. Lastly, since it’s super messy, finely dice ONE chipotle pepper from the adobo sauce. You can remove the seeds if you want but I happen to like the added spice.
To your non-stick skillet, add a splash of olive oil on medium heat. Once hot, add in your ground chicken. Break it up with your spoon and let it cook until it’s ALMOST fully cooked through (about 3-4 minutes)
Add your garlic at that point and let it cook for about 1 minute, or until fragrant. Next, add in a generous pinch of salt and about 1-2 tsp of taco seasoning. Mix that all together until combined.
Add in your chipotle pepper and 2 tsp of the sauce in the can. Mix that all together in the ground chicken. Taste to see if it needs any additional salt or sauce and then take it off the heat.
Once taken off the heat for a couple of minutes, add in your sour cream. This is going to make the ground chicken have the PERFECT balance of tangy and spicy and cooling and delicious.
Mix together a couple tablespoons of sour cream and 1 tsp of the chipotle sauce for the drizzle. Add a little bit of water to make it more “drizzleable” and thin it out.
Next, pile it on top of your corn tortillas, add your toppings. Drizzle the crema on and enjoy!
