Sprouts Vegan Protein Powders are BACK this season just in time to bring us those warm and spiced flavors that we love. For this particular recipe, I used the Apple Pie flavor and oh my WORD. Talk about yum!
The moment you take the lid off of the protein powder, it’s almost like smelling your favorite spiced apple candle.
It’s bursting with spiced and caramel flavor – almost as if you’re eating a piece of pie for breakfast! Could it get any better than that?
Oh wait – it could! Add in hearty rolled oats, deliciously sweet maple syrup, fresh chunks of juicy honeycrisp apple and a few other staple ingredients and lo and behold, you have the best baked oatmeal bars!
They’re thick, dense and loaded with nutrients! I love to pair mine with a hot cup of coffee and of course, a little extra vanilla drizzle or even a spoonful of peanut butter for extra protein!
Let’s get into what you need to make these bars!
Ingredients You Need:
- Sprouts Caramel Apple Pie Protein Powder
- Rolled Oats
- Unsweetened Applesauce
- Flax eggs
- Maple Syrup
- Non-dairy milk (I used cashew!)
- Vegan butter
- Baking powder, Cinnamon, Salt + Vanilla Extract
- Honeycrisp apples
Best Baking Tips:
Alright my friends, as always, with every baking recipe, I like to start off by making sure the oven is preheated. Crank it up to 350 degrees and let it warm up as you begin to prep the other ingredients.
Since this is a vegan recipe, I used flax eggs! If you’ve never used them before, don’t worry because they are SO simple to whip up.
Simply combine the flax seed meal with water and let it sit to thicken up for about 5 minutes. And voila! While it’s not an exact egg substitution, it really helps to bind all of the ingredients together, not to mention add a boost of nutrition and fiber with the flax! 😉
While that is working to thicken, melt some plant based butter in a large bowl. Let it cool for a few minutes once it’s melted.
To the bowl, whisk in all of the wet ingredients like maple syrup, applesauce, flax eggs vanilla extract and the non-dairy milk until it’s all combined.
Next, add in the dry ingredients (the oats, Sprouts Apple Pie protein powder, baking powder, cinnamon, salt) directly into the same bowl. Hello, easy one bowl baking, am I right?!
Mix until that is combined and then finally, quickly chop up the apples! I personally love honeycrisp because they are SO sweet and crunchy. You could also use gala or if you wanted something more tart, granny smith apples!
I mixed about ⅔ of the apples into the batter and saved the rest to top it.
Grab your favorite 9×9 baking dish and grease it with cooking spray or more of that plant based butter.
Add the oatmeal mixture directly to the baking dish and then if desired, top the apples by gently pushing them down into the mixture.
By now – the oven should be warm and good to go! Place it in there to let it bake until golden brown on top and set in the middle.
Remove and let it cool just for a few minutes and then slice it up!
Oatmeal Bar Garnishes:
- Warmed Nut Butter
- Extra Drizzle of Maple Syrup
- Vanilla glaze
- Extra sliced apples
- Pinch of cinnamon

Vegan Apple Pie Oatmeal Bars
These Vegan Apple Pie Oatmeal Bars are the most delicious Fall breakfast! Loaded with rolled oats and fresh apples, these bars are protein packed, cozy and delicious!
Ingredients
- 2 flax eggs
- 1 and 1/3 cups non dairy milk (I used unsweetened cashew)
- 3 tbsp melted non-dairy butter
- 1 tsp vanilla extract
- 3/4 cup unsweetened applesauce
- 1/3 cup maple syrup
- 3 cups old fashioned rolled oats
- 1 and 1/2 scoops Sprouts Vegan Caramel Apple Pie Protein Powder
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 2 small honey crisp apples, diced (around 2 cups)
- 1/4 tsp salt
Vanilla Glaze Recipe
- 1/3 cup powdered sugar
- 1-2 tbsp. non-dairy milk (more if you want the glaze thinner, less if you want it thicker)
- splash of vanilla extract
Instructions

Preheat the oven to 350 degrees. Make the flax eggs by combining 2 tbsp of flaxseed meal with 6 tbsp water in a small bowl. Let it sit for about 5 minutes or so to thicken up.

In a medium sized bowl, melt the 3 tbsp of non-dairy butter. Let it cool for a couple of minutes.

Whisk together 3 tbsp melted butter, flax eggs, ⅓ cup maple syrup, ¾ cup applesauce, 1 tsp vanilla extract, and 1 and ⅓ cups non dairy milk until combined.

To the same bowl, add the 3 cups of rolled oats, 1 tsp baking powder, ½ tsp cinnamon, 1 and ½ scoops of Sprouts Protein Powder ¼ tsp of salt. Stir together using a wooden spoon until everything is combined.

Dice up the 2 honeycrisp apples and gently fold in the apples into the bowl, leaving some to go on top.

Grease a 9x9 baking pan. Add the oatmeal mixture carefully to the pan and spread it out evenly on the pan. Add extra diced apples to the top.

Bake for 38-42 minutes or until the top of oatmeal is golden brown. Remove from the oven when done and let cool for a few minutes. Cut into 9 bars when cool.

If desired when fully baked, drizzle the vanilla glaze on top. Or top with any of the garnishes mentioned above. Enjoy!

Once it's cooled, whisk together the ⅓ cup powdered sugar, 1-2 tbsp milk and vanilla splash of extract to make the glaze. Make it as thick or thin as you'd like it! Generously drizzle it over top of the baked oatmeal bars.
