Vanilla Almond Granola

This Vanilla Almond Granola is the perfect breakfast, snack or dessert! It’s naturally sweetened, perfectly crunchy and super simple to whip up! 

Alright y’all, Spring is almost here and I feel like it’s time for me to do another granola flavor here on OBB. I try to make one every season – take for example my Maple French Toast Granola which is perfect for those cozy Fall vibes. 

Or you could try out my Chocolate Coffee Granola which is the best for giving you a perk during those dreary Winter days. 

But, I do really really love this particular Vanilla Almond Flavor. 

Why You’ll Love this Granola: 

I love granola because it’s the best to have around as a snack – that’s my favorite way to eat it! Whether I’m topping a yogurt bowl, adding it on top of oatmeal or just eating it by the handful as I go throughout my day – it always gives me a little burst of energy! 

This Vanilla Almond Granola tastes so FRESH and pure – both the almond flavor and vanilla come out SO well. That’s probably because I use both almond butter, slivered almonds and pure vanilla extract in it!

Hello, pure and natural flavor! 

I love that it gets super crisp, crunchy but never like breaking your teeth on a cluster crunchy. You know what I’m talking about right?!

Also, I love that this granola is pretty healthy. It is made with minimal ingredients and no refined sugars! So it has the perfect essence of sweetness without giving you a sugar crash like a lot of store bought granolas do.

I usually store it in a big mason jar and snack on it throughout the week – although I’m not opposed to eating at least ¼ of the batch while it’s still warm on the sheet pan, ha! 

So let’s get into what you need to make it! 

Ingredients You Need: 

  • Old fashioned rolled oats 
  • Coconut oil 
  • Vanilla extract 
  • Almond butter 
  • Slivered almonds 
  • Maple syrup 
  • Salt 

How to Make Granola: 

The great news about making homemade granola? It’s incredibly easy! Seriously think one bowl baking goodness! 

For this recipe, start out by preheating the oven to 325. Make sure your oven is fully preheated before you add in the granola! 

Next, in a large bowl, mix together the oats and slivered almonds. 

In a smaller bowl, melt the coconut oil. To the melted coconut oil, add in the vanilla extract, the almond butter, the maple syrup and a pinch of salt. Whisk together until combined.

Add the wet ingredients directly into the bowl with the oats. 

Mix together with a large wooden spoon until it’s all combined and the oats are evenly coated with the wet ingredients!

Next, grab a large baking sheet – mine was non-stick! Add the granola mixture onto the baking sheet and spread it out evenly amongst the pan.

It’s baking time! Bake for 15 minutes. Remove, flip it around a bit and then put it back in the oven and bake for an additional 8-10 minutes until golden brown and crispy.

Once done, let it sit and cool for a bit. Like I mentioned above, I store mine in a large wide mouth mason jar but you can store it in tightly sealed tupperware. 

How Long Does This Granola Keep? 

 

Speaking of storing, this granola should be kept at room temperature (in a tightly sealed container) and it should be good for up to a week – if it lasts that long. It never does in my house! Ha! 

What to Eat Granola With: 

Use it as a topping on: 

  • Yogurt 
  • Ice cream 
  • Oatmeal 

Or just eat it by the handful, eat it as cereal and love every single bite! 🙂

Vanilla Almond Granola

Ingredients

  • 3 cups rolled oats 
  • 1/3 cup melted coconut oil
  • 1/3 cup almond butter 
  • 2 tsp vanilla extract 
  • 1/4 cup maple syrup 
  • 1 cup slivered almonds 
  • pinch of salt

Instructions

  1. Preheat oven to 325 degrees. Add oats and slivered almonds to a large bowl. Mix to combine.

  2. In another bowl, add melt the coconut oil. Let it cool for a minute or two. To the melted coconut oil, add the almond butter, maple syrup, vanilla extract and a pinch of salt. Whisk to combine until smooth.

  3. Add in the wet ingredients to the dry and combine until sticky. 

  4. Add to a nonstick baking sheet and make sure it’s spread evenly. 

  5. Bake for 15 minutes. Flip and then add back into the oven for an additional 8-10 minutes. Let cool on the pan for a few minutes and then eat up! Store leftovers in a tightly sealed jar or tupperware container at room temperature for up to 7 days.

Recipe Notes

No coconut oil? You can substitute 1/3 cup of melted butter.
