Turkey Pesto Bagel Sandwich

This Turkey Pesto Bagel Sandwich is the best and easiest meal! Loaded with turkey, melty mozzarella cheese, tomato and of course, pesto – this is an easy sandwich you can whip up right at home!

Happy end of January, my friends! Wow – where did this  month go?! Usually January goes so slowly for me but alas – it truly flew by this year…not surprising considering I am due in just a few short weeks. Ahh! 

But seriously – as I get closer and closer to my due date, I have found that all I need in life is quick, simple and delicious meals. And this bagel sandwich seriously checks off all of those boxes! 

Why You’ll Love this Sandwich: 

First off – like I mentioned above, it’s SO quick to throw together. I don’t know about y’all, but sometimes I get lunchtime paralysis – like I never think of what to have for lunch and then suddenly it’s noon and I’m starving and end up ravenously eating whatever I have in the cabinet. 

But not this meal! 

It’s made with easy, staple ingredients like deli turkey, mozzarella cheese, jarred pesto (hello easiness!) and these new Carbonaut Bagels!

I found these bagels at Sprouts and have really been enjoying them! Not only are they gluten free but they also have a ton of fiber in them which is definitely needed for me in my pregnancy. 

They are the perfect golden and toasty vehicle for the ingredients for this sandwich! Highly recommend looking for them the next time you are shopping at your local Sprouts. 

Now – one could probably get away with just turkey and cheese on the bagel….but why stop there?!

I love loading mine up with extra goodies like jarred pesto which is like a flavor bomb as well as freshly sliced juicy tomatoes.

If you wanted to get super into it, you could even make a quick balsamic glaze to drizzle on top for some extra yumminess. 

For me – once it was toasted, melty and delicious, I couldn’t resist just biting into it right there. 

So many textures, flavors – so much deliciousness! So let’s get into what you need to make it and my best tips on how to make it! 

Ingredients You Need: 

  • Deli turkey meat 
  • Fresh Mozzarella Cheese 
  • Carbonaut Bagels (or bagel of your choice) 
  • Jarred Pesto (or homemade!) 
  • Tomato

Best Sandwich Making Tips: 

Alright – so since this is a bagel sandwich, we have to take into account the right time to toast what and when.

I ended up toasting the bottom side of my bagel first – then I added on both the sliced turkey as well as the fresh mozzarella slices on top. I also added in the top half of the bagel (which was untoasted) 🙂

This will ensure that both sides are toasted evenly and that your turkey gets warm and the cheese gets melty!

Once both sides of the bagel are done toasting, add a very generous schmear of pesto on the top side of the bagel. Slice a few slices of tomato very thinly and add it on top. If desired, add some salt and pepper and garlic powder on top of the tomato for extra flavor. 

And then it’s pretty simple after that – you smash both sides together (very carefully of course) and it’s time to eat!

It’s so delicious, flavorful and easy to make. I love this sandwich and I truly think I could eat it for lunch everyday!

Turkey Pesto Bagel Sandwich

This Turkey Pesto Bagel Sandwich is the best and easiest meal! Loaded with turkey, melty mozzarella cheese, tomato and of course, pesto - this is an easy sandwich you can whip up right at home!

Ingredients

  • 1 Carbonaut Plain Bagel, sliced in half (or bagel of your choice)
  • 2-3 slices tomato, thinly sliced
  • 4-5 oz freshly sliced deli turkey
  • 1-2 tbsp jarred pesto
  • 2 oz. fresh mozzarella cheese, sliced

Instructions

  1. Preheat your toaster oven.

  2. Slice the bagel in half. Slice the tomatoes thinly as well as the 2 oz. of fresh mozzarella and set those aside. 

  3. Add the bottom half of the bagel along with the 4 oz of fresh turkey and 2 oz. of fresh mozzarella slices on top of it to the toaster oven.

  4. Let heat in the toaster oven until the cheese is beginning to get melty on top - about 2 minutes or so. Keep an eye on it! 

  5. Next, add in the top half of the bagel and let it toast for 2 minutes as well or until it gets golden brown. Once again, keep an eye on both halves of the bagel to make sure they don’t burn! 

  6. Once golden brown and the cheese is fully melted, remove both halves of the bagel from the toaster oven carefully.

  7. On the top half of the bagel, add on the 1-2 tbsp of jarred pesto as well as the sliced tomatoes. Place on top of the bottom half and eat up! Enjoy!
