Speaking of things that make me happy….this GRILLED CHEESE MAKES ME HAPPY!

Now that I’m pregnant, 20 weeks to be exact, I am all about easy and delicious recipes – specifically for lunch.

For me, since I work from home, when noon rolls around I’m literally starving and wondering what in the world I’m going to have for lunch and what I have to fix. And I need something QUICK before I get hangry! Anyone else?! 😉

Why You’ll Love This Recipe:

This recipe is really great because you most likely have most of these ingredients in your fridge/pantry and if not, they’re super inexpensive!

Not only is it inexpensive but it’s also SO easy and quick to whip up. And delicious! Win win win, am i right?

Let’s talk about bread first. You can use whatever floats your boat! I love using either Italian bread or Sourdough bread for this recipe. Both are delicious.

Oh, and I always use salted butter to butter both sides of the bread. Yup. It’s a must.

Next, let’s talk about cheese!  I used freshly grated sharp cheddar cheese for this. There are incredible high quality cheese options at both Aldi and Lidl that I would recommend for this.

The cheese melts and has a delicious salty oooey gooey deliciousness that coats the bread.

The apple is a crisp, sweet addition that pairs so well with the cheese! I mean, hello! It’s basically like a charcuterie board on a sandwich.

There is a delicious homemade honey dijon dressing on the bread that helps break up the richness of the cheese with it’s sweet/savory tanginess!

The fresh deli lunch meat is delicious and of course, pairs perfectly with everything else that comes on the sandwich.

It all results in a delicious, ultra cheesy grilled cheese that is incredible. Perfect to dip in all of your favorite soups or chilis this season or to just eat on your own.

So let’s get into what you need to make it!

Ingredients You Need:

  • Bread
  • Sharp cheddar cheese
  • Apple (I used gala but you can use whatever crisp apple you enjoy!)
  • Dijon mustard
  • Honey
  • Salted butter
  • Deli turkey meat

Best Grilled Cheese Making Tips:

When I make this recipe, I begin by getting out all of my ingredients and prepping them.

For me, that means slicing the apple thinly as well as grating the cheese.

I also butter both outside sides of the bread I’m using and grab my favorite pan to get it warmed up.

On one of the inside pieces of bread, be sure to spread a thin layer of dijon mustard and a drizzle of honey. Combine that with a bread knife.

Put the butter side down in the pan and the honey dijon side up. Layer the apples as well on top of the honey dijon and then finally, add the turkey (as much or as little as you want) and then the CHEESE!

Then add the other piece of bread butter side UP on top of the cheese.

Let cook for a few minutes on medium heat – you want the cheese to start melting and the bread on the bottom to get golden brown. Carefully flip (try not to let everything fall from the sandwich lol) and repeat on the other side.

Remove from the pan and if desired, slice it in half.

I think you’re gonna love every single bite of this cheesy sweet and savory goodness. Enjoy, my friends!

Ingredients

  • 2 slices thick, hearty bread
  • 1 and 1/2 tbsp salted butter (divided)
  • 1/2-3/4 cup sharp white cheddar cheese, freshly grated
  • 1 tbsp dijon mustard
  • 1-2 tsp honey (depending on how sweet you want it)
  • 1/2 small honeycrisp apple, sliced into long thin slices
  • 4 oz fresh deli turkey meat

Instructions

  1. Add 1/2 tbsp of salted butter to 1 side of each slice of bread. On the other side of one piece of bread, add the dijon mustard and honey and spread it thinly with a butter knife. Add the thinly sliced apple on top of this piece of bread.

  2. On the inside of the other slice of bread, add the turkey meat followed by the freshly grated sharp cheddar cheese!

  3. Warm up a skillet on medium heat. Add 1/2 tbsp salted butter and let it melt. Add the buttered side down of one slice of bread and then top it with the other slice, buttered side UP.

  4. Let cook for 3-4 minutes on one side, or until the bottom part of the bread becomes golden and crispy.

  5. Using a spatula, carefully flip the sandwich to the other side. Cook for 2-3 more minutes. If desired, add another pat of butter for extra goodness.

  6. When both sides are golden and crispy, the sandwich should be done! Serve with your favorite soup and eat immediately. Enjoy!

Recipe Notes

NOTES: Don't let your butter get too hot/browned or you bread will cook too quickly and it will burn.

I recommend 3-ish minutes per side of bread - but feel free to carefully check the bottom piece of bread using a spatula to make sure it doesn't cook too quickly. It should be golden and crispy!
