Summer is officially here which means cookouts galore! This Tortellini Pasta Salad is loaded with all the goods including the best tortellini, tomatoes, spicy salami and the easiest homemade Italian dressing ever! Mix it all up and you’re set!

Okay real talk: does anyone actually prefer the side dishes at cookouts to the main dish?! From the creamy mac and cheese to the fresh slices of watermelon to baked beans and of course: pasta salad. Usually, I’m all for a mayo based pasta or potato salad. However, this Tortellini Pasta Salad has been ROCKING MY WORLD, Y’ALL.

It’s so fresh, vibrant and delicious! It’s loaded with the most delicious DaVinci tortellini (and they’re multicolor which makes them even better in my opinion) which gives the salad itself a delicious texture. On top of that, you have the freshest summer ingredients you could ever find. Everything from juicy pepperoncini to black olives to fresh cherry tomatoes, creamy mozzarella balls (yes, actual balls of mozzarella), crunchy red onion and of course, spicy salami!

Oh and did I mention the ah-mazing homemade Italian dressing?!? It blows Olive Garden’s out of the water you guys! Not to mention it has all pantry ingredients and all you have to do is put it all in a mason jar, shake it up and pour! 

Another thing I absolutely love about this Tortellini Pasta Salad is that you can make it in advance! I don’t know about y’all, but I often find myself running around like a chicken with my head cut off on a day where I know I have to bring several things to a cookout. So by making this the night before and having it sit in my fridge ready to go – my life gets SO much better. Not to mention, I personally think it tastes even better the next day – it gives the Italian dressing extra time to soak into everything! 

Okay, I’ll stop blabbering. Let’s get into how to make this!

Ingredients You Need for Tortellini Pasta Salad: 

  • Davinci Multi-Color Tortellini
  • Spicy salami
  • cherry tomatoes 
  • mozzarella balls
  • red onion  
  • green bell pepper 
  • black olives
  • pepperoncini
  • olive oil 
  • red wine vinegar
  • fresh garlic 
  • water 
  • salt and pepper 
  • sugar 
  • dried oregano and parsley

I know it may seem like a ton of ingredients but you want this salad to be absolutely loaded that way you can get a little bit of everything in each bite! 

How to Make Tortellini Pasta Salad: 

Alright, y’all. This is the best part: how absolutely EASY it is to make this dish!

Begin by cooking the tortellini according to the package directions. Don’t forget to salt your pasta water! While it’s cooking, slice and dice all of your toppings. That means: halve the cherry tomatoes, slice the black olives, slice the pepperoncini, quarter the balls of mozzarella, and dice the red onion, green bell pepper and spicy salami!

Next, grab a mason jar and add olive oil, red wine vinegar, minced garlic, dried oregano, dried parsley, salt, pepper and sugar. Pop a lid on it and shake it up until combined! Taste and adjust seasoning if necessary.

By now, the tortellini should be done cooking. Drain it and let it cool for a minute. Add to a large bowl. Top with all of the ingredients that you just chopped up! If desired, add a large handful of chopped herbs (I used Italian Parsley!). Lastly, pour the dressing over the salad. Toss until it’s all combined. Place in the fridge to cool or eat it immediately!

Ingredients

  • 2 7 oz. boxes of DaVinci Multi-Color Tortellini
  • 8 oz. spicy salami
  • 2 cups cherry tomatoes, halved
  • 8 oz. mozzarella balls, quartered
  • 1/2 cup red onion, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup black olives, sliced
  • 3/4 cup pepperoncini, sliced
  • 1/4 cup fresh parsley

Homemade Italian Dressing

  • 1 cup extra virgin olive oil
  • 1/3 cup red wine vinegar (can also use white wine vinegar or sub both)
  • 1/4 cup water
  • 2 cloves fresh garlic, minced
  • 1/2 tbsp salt
  • 1/2 tbsp sugar
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp cracked pepper

Instructions

  1. Cook your Davinci’s Multi-Color Tortellini according to package directions. Don’t forget to salt the pasta water!

  2. While it’s cooking, slice and dice the rest of the salad mix-ins! Set these aside. 

  3. Next, make the quick homemade Italian dressing! To a mason jar, add in all of the dressing ingredients. Cover with a lid and shake until it’s all combined. Taste and adjust seasoning if needed.

  4. Once the pasta is done cooking, drain it and add to a large bowl. Add the veggies, toppings and Italian dressing and toss thoroughly to combine. Taste and adjust seasoning if needed. Let cool in the refrigerator or eat immediately! Can be stored in the fridge for up to 4 days. Enjoy!

    You bet I’m all about those sides and especially if it involves a delicious pasta salad like this one! Love all the flavours going on, especially those mozza balls….I could pop those like candy, lol. And that pasta sounds wonderful- love the colours.     I just taste tested mine and wow it’s good! I cheated and used ‘Good Seasoning’ shaker dressing though haha, I’m lazy. We’re a vegetarian family (I swapped in a veggie Italian sausage in instead of pepperoni) and I plan on eating this as a lunch for a couple days and as a side for a dinner, maybe with hot dogs, ohh or veggie buffalo wings! Reminds me of the pasta salad my mom used to make, only better 😉

    Thank you Haylie! This recipe was the star of our Christmas dinner this year! 😊 I tasted a similar pasta salad at a work gathering & wanted to recreate it. I googled ‘Pasta salad with tortellini’ & by God’s Grace, found your recipe & your story! Your story is VERY similar to my daughter’s to include our geo-location (we’re in VA!), the timeframe you all were in undergrad, etc. She is still struggling with both her body image & her relationship with God. But reading your story was encouraging & reminds me that all things work for the good of those who love God and are called according to His purpose…and her time will soon come!
