It’s Summer, y’all. And for me, Summer means lots of cookouts! And also a lot of bug bites. Seriously my legs are eaten up. Anyone have any good recommendations for a non-toxic bug spray?! Hit ya girl up! LOL! Anyway – speaking of being eaten up….let’s talk about this Summer Vegetable Farro Salad!!!
What is Farro?
Prior to this recipe, I had never had farro! Y’all know how much I love my grains..so I am SO happy to add a new one to my weekly menu! If you’re not familiar, farro is an ancient Medditerrenaean grain. It is made with similar ingredients to more familiar grains like rice or quinoa – however, it has such a delicious nutty flavor and a chewy texture! Not to mention, it has a ton of fiber in each serving size! Carbs + fiber = a win-win in my book!
The Best Summer Vegetables
I recently let y’all know in my Heirloom Tomato Tart post that I have come to love fresh tomatoes. FINALLY. PRAISES. So, it’s no surprise that I made sure to load this salad up with the best cherry tomatoes! They’re bite sized, they’re juicy – they’re so perfectly in season that they are almost sweet!
Another vegetable that happens to make its way into this Farro Salad is corn! Fresh corn, to be exact. I sliced it right off of the cob. It is SO fresh and juicy, y’all. I personally love corn. I don’t get to have it nearly as often as I’d like due to the fact that my husband isn’t a big fan. However, this corn seriously gives this salad a super refreshing and crunchy vibe!
Lastly, we have the always delicious and perfect garnish of green onions! I personally love green onions! They aren’t as mellow as yellow onions but aren’t as spicy as red. They have the perfect balance to achieve that nice crunchy “kick” without being too overwhelming.
When you combine all of these elements and then of course you add the best tangy and creamy feta cheese – you have the Summer Veggie Farro Salad! It’s savory! It’s refreshing! It’s light, creamy and delicious! The perfect dish to bring to a Summer BBQ or to eat when you’re staying at home enjoying your back deck sipping on a glass of white wine. Or is that just me and what I would rather do?! #homebodyforLIFE! Let’s get into how to make it!
Ingredients You Need for Summer Vegetable Farro Salad:
- Bob’s Red Mill Organic Farro
- cherry tomatoes
- green onions
- feta cheese
- fresh corn
- olive oil
- salt and pepper
- lemon
How to Make Summer Vegetable Farro Salad:
Start with rinsing 1 cup of farro. To a medium pan, add the rinsed farro and cover it with 3 cups of water (or stock!) and a pinch of salt. Bring this to a rolling boil on the stove. Once boiling, reduce heat to medium low and cook for 30 minutes, stirring occasionally.
While the farro cooks, prep your vegetables! Dice 3 stalks of green onions very thinly. Slice the corn directly off of 3 cobs (it’s about 1 cup worth of fresh corn). Halve about ½ a pint of cherry tomatoes. Set all of these aside.
When your farro is done, season it with a pinch of salt and pepper. Add it to a large bowl. To the bowl, add in your corn, green onions, tomatoes and about ½ cup of feta cheese. Mix to combine. Add a drizzle of olive oil on top as well as the juice of an entire lemon and mix one more time.
Enjoy this Summer Vegetable Farro Salad hot or cold! It’s the Perfect summer dish. Your guests won’t be able to NOT eat this – especially paired with a refreshing beverage!

Summer Vegetable Farro Salad
This Summer Vegetable Farro Salad is not your average “bring to a cookout” salad! It’s loaded with delicious chewy farro and tons of Summer veggies! Refreshing, light and delicious!
Ingredients
- 1 cup Bob's Red Mill farro, rinsed
- 3 cups water (or stock)
- 1/2 pint halved cherry tomatoes
- 3 large stalks of green onions, diced (about 3/4 cup)
- 1 cup fresh corn (sliced from the cob)
- 1/2 cup feta cheese (more if desired)
- juice of 1 lemon
- salt and pepper to taste
- drizzle of olive oil
Instructions

Once the farro is done, add it to a bowl. To this bowl, add the cherry tomatoes, corn, green onions, feta and mix to combine. Add the juice of one lemon and a drizzle of olive oil as well as salt and pepper to taste. Mix to combine. Enjoy hot or cold!
