Strawberry Elderflower Fizz

This Strawberry Elderflower Mojito Fizz is the ultimate fun drink that is completely sans alcohol but HUGE on flavor! Bright sweet strawberries paired with floral elderflower simple syrup..yes please!

Y’all, we are so close to Spring I can taste it! The trees are starting to blossom, grass is getting greener…days are getting longer. I’m so excited! 

I am especially excited so I can sip on this fun fruity beverage all season long. Let’s dive in! 

Why You’ll Love This Drink: 

Where to begin! First off, whether you choose to not drink for personal reasons or you might currently be pregnant (like me!)…this is the ULTIMATE mocktail! 

If you don’t know that term, it basically just means a cocktail WITHOUT the alcohol in it. So for all of you who love a fun and fruity beverage without the liquor/wine/beer added in…this one is for you! 

If you do love those things, I gotchu! Look in the Ingredient Substitutions for my top choices of alcohol to add to this drink. 

I specifically love the flavor profile of this Strawberry Elderflower Fizz. Like I mentioned above, I used one of my favorite flavors of Clipper Tea, Strawberry Elderflower to create an easy simple syrup to sweeten this drink.

And then, I brewed a cup of their tea once more to add to the actual drink itself! It’s fruity, floral and tastes just like sunshine on a warm Spring afternoon. 

The drink itself also has FRESH strawberries in it. Not just that but also fresh limes and mint. It gives it such a super fun mojito vibe that is sweet, herbaceous and citrusy from the limes!

And of course, I personally can’t have a fun drink without topping it with something bubbly. I personally love using a lime flavored seltzer in this drink! 

When you top it with the fizzy drink and then garnish with fresh strawberries and a sprig of mint, it’s absolutely delicious AND beautiful.

You’re gonna love it, I promise! So let’s get into what you need to make it. 

Ingredients You Need:

Clipper’s Strawberry Elderflower Tea – this will be used to make the simple syrup and the drink itself has a cup of tea in it. You can use any strawberry herbal tea you’d like, but I’m very partial to this one! 

Water + Granulated Sugar – you will need both of these ingredients to make the quick simple syrup.

Fresh Strawberries: make sure they are ripe and sweet! 

Fresh Limes: get extra juicy ones at the store! 

Mint: this will both garnish the drink and go inside of it as well. 

Seltzer to Top: this is the “fizz” part – I used lime flavored seltzer for this recipe! 

Ingredient Substitutions: 

If you want to make this drink in a pinch, you can substitute agave, honey or storebought simple syrup for the homemade simple syrup – although you will lose a lot of that floral flavor from the homemade version!

Instead of lime seltzer, you can use club soda or any flavored seltzer for topping. If you want to make it a little *spicy*, use ginger beer! 

You can definitely use frozen strawberries instead of fresh, just be sure they are thawed. 

If you’re in a pinch, you can use storebought lime juice instead of fresh lime but once again, you do lose out on flavor so I would only recommend this in a last minute situation. 

I personally think the best alcohol to go in this drink would be white rum, coconut rum or vodka! Just add 1.5-2 oz of your preferred alcochol to this beverage and enjoy. 

How to Make Strawberry Elderflower Fizz Step by Step:

  1. Start off by making the simple syrup. Add 2 cups of water to a small pot. Let this come to a rolling boil. Once boiling, remove from heat and add 3 Clipper Strawberry Elderflower tea bags and let steep for 5 minutes. strawberry elderflower simple syrup in pot with tea bags in it
  2. Once the steeping time is over, remove the bags and add 2 cups of sugar. Stir until the sugar has been dissolved. Let this begin to cool while you work on the other ingredients. 
  3. Brew a cup of Clipper Strawberry Elderflower Tea. Let steep for 5 minutes, remove the tea bag and then pour this directly over ice. 
  4. Slice the strawberries and limes. Add to a cocktail shaker along with about 7-8 mint leaves. 
  5. Using the back of a spoon, muddle these up – it should look something like this: side by side photos - one of the ingredients in the cocktail shaker, the right photo is the ingredients muddled
  6. To the cocktail shaker, add 1 oz of the simple syrup, 4 oz of the brewed tea. Add the lid on and shake shake shake until combined. mocktail ingredients in the shaker
  7. Add ice to your favorite cocktail glass and strain the drink over the ice. Top with the seltzer. Add freshly sliced strawberries and extra mint to garnish. Cheers!

Best Tips to Make This Drink: 

Use ripe strawberries! In my opinion, the riper the berry is, the sweeter it will be! Just be sure that you save some for garnish on top. 

Be sure to start with just 1 oz of the simple syrup. It’s literally a sugar syrup so it sweetens your drink quite a bit.

I find it best to start with less and then if you want your drink sweeter, add more! It’s always easier to add more than to take away 🙂 

Storing Leftover Syrup: 

Simply store leftover simple syrup in a tightly sealed jar in the refrigerator. It should last up to 5 days or so in the fridge!

Ingredients

Strawberry Elderflower Simple Syrup

  • 3 Clipper Tea Strawberry Elderflower tea bags
  • 2 cups water
  • 2 cups granulated sugar

Strawberry Elderflower Fizz Drink

  • 1/3 cup fresh diced strawberries (plus more for garnish)
  • 1/2 medium sized lime, thinly sliced (and more to garnish if desired) 
  • 7-8 mint leaves (plus more for garnish)
  • 1-2 oz strawberry elderflower simple syrup (see notes!)
  • 4 oz of brewed Clipper Strawberry Elderflower tea
  • seltzer to top off drink

Instructions

How to Make Strawberry Elderflower Simple Syrup

  1. Add 2 cups of water to a small pot. Bring to a rolling boil. Remove from heat and then add in 3 Strawberry Elderflower tea bags. Let steep for 5 minutes. Remove the tea bags and then add in the 2 cups of sugar. Stir until the sugar dissolves. Store this in a glass jar to let cool.

Making Strawberry Elderflower Fizz

  1. Brew one cup of Strawberry Elderflower tea. Let steep for 5 minutes and then remove the tea bag and pour over ice.

  2. While the tea is steeping, dice the strawberries and thinly slice the lime.

  3. Add the diced strawberries, lime and 7-8 leaves of fresh mint to a cocktail shaker. Use the back of a spoon to muddle these together until they are mixed well and are juicy and combined!

  4. Add 1 oz of the strawberry elderflower simple syrup and 4 oz of the brewed tea to the cocktail shaker. Add the lid on the cocktail shaker and shake to combine! (SEE NOTES!)

  5. Add ice to your favorite cocktail glass. Strain the shaker over the ice. Top with a fizzy pour of seltzer or club soda. Garnish with additional strawberries slices and mint. Enjoy! 

Recipe Notes

If you like your drinks sweeter, you might want to taste the in the shaker BEFORE you strain it to make sure that the drink is sweet enough for you. I liked 1 oz of simple syrup, but 2 oz might be more your preference!
