This Spring Clean Cobb Salad is loaded with veggies, protein and topped with the most delicious homemade honey dijon vinaigrette. It will surely put you in a sunshine mood and give you the energy you need to tackle Spring Cleaning!
Does anyone else love the idea of Spring Cleaning? We just had a yard sale this past weekend and it felt SO good to get rid of some stuff! I literally went to my closet and asked myself “Have I worn this in the last year?” and if the answer was no, into the give away pile it went. It just seems like I hold on to sentimental things way too long. Like that shirt I tie-dyed with my best friends when I was a freshman in high school. Or those high heels that are still a littttle tight but I have to keep them for special occasions, right? No! It’s okay to purge your things every once in a while.
This is what this salad seems to be all about! Purging out the fridge and pantry! I had leftovers that NEEDED to be used. Like, hello one dozen dyed Easter eggs I need to eat. Hello slices of leftover Easter ham. Oh, and hey 4 heads of broccoli.
So, I thought to myself…what can I do with these? Put them in a salad! Hence the name Spring Clean Cobb Salad 🙂
This salad screams Spring! All of the elements are SO fresh. Including…
- broccoli, onion and spinach making it SUPER crunchy
- allll of the extra protein like hard boiled eggs, ham and bacon!
- topped with this delicious tangy and subtly sweet homemade dressing made with dijon and honey and balsamic that you could basically just drink by itself it’s so good
Another thing I love about this salad is that it can be so diverse. Here are a few items that you could add to this to make it extra cobb salad-y!
- fresh tomatoes
- cheese! feta or blue cheese would be delicious
- green onion
- grilled chicken
- avocado
I just used what was in my fridge – but the items listed above would be delicious in this recipe as well!

Spring Clean Cobb Salad
Ingredients
- 4 cups spinach
- 2 hardboiled eggs, chopped
- 1/2 white onion, diced
- 1 cup broccoli, chopped
- 2 slices fully cooked bacon
- 1 slice fully cooked ham, chopped
Honey Dijon Vinaigrette
- 3 tbsp olive oil
- 2 tsp balsamic vinegar
- 1.5 tsp dijon mustard
- 1 tsp honey
- juice of one lemon
- salt and pepper to taste
Instructions

Arrange your spinach in a bowl. Arrange your toppings in neat layers, rows or sections if desired.

For the dressing, combine the olive oil, balsamic vinegar, dijon mustard, honey, juice of one lemon in a bowl. Whisk together to combine. Add salt and pepper to taste. Drizzle over salads. Crack additional pepper on top if desired. Serve immediately!
