Simple Strawberry Mojito

This Simple Strawberry Mojito is the ultimate easy and fun Spring cocktail to whip up! Fresh limes, strawberries and mint make this an updated twist on a classic. Cheers! 

Happy St. Patrick’s Day! And happy 3 days until Spring…not like I’m counting or anything! 😉 

And what better way to celebrate all of those things than to publish a brand new cocktail here on OBB?! I absolutely loveeeee this drink and I know you will too! 

Why You’ll Love this Drink:

First off, from the recipe name itself, this drink is SIMPLE. I’m all for fun cocktails but I also have little time on my hands so I need them to come together quickly and easily…and that’s exactly what this one does! 

It’s so fresh – you have the herbaceous mint, the juicy strawberries and the spritz of tangy lime! The combo of those three is fresh and sweet with a punch of acidity and it’s perfect.

Add it in with a little bit of extra sweetness of your syrup of choice and then some white rum and you’re set!

It’s sweet, fizzy, cold and perfectly sippable! So let’s get into what you need to make it! 

Ingredients You Need: 

Fresh Strawberries – the riper the better here, you want them sweet and extra juicy! 

Fresh Lime – I also recommend using fresh lime here, and not the bottled juice you can get. 

Fresh Mint – you can’t have a mojito without mint! 

Sweetener – I used homemade simple syrup but feel free to use whatever you have on hand. 

Ice – needed to make it refreshing and chilled! 

Fizzy Carbonated Drink like Seltzer – use a seltzer, club soda etc for the fizzzzz!

How to Make Drink in 3 Simple Steps: 

  1. Slice up the strawberries as well as the lime. Add these along with about 7-8 mint leaves to a cocktail shaker. Using the back of a spoon, muddle these up – they should look something like this: 2 photos of cocktail shaker side by side - one has the ingredients un-muddled, the other has the ingredients muddled.
  2. To the cocktail shaker, add simple syrup and the rum. Add the lid on and shake shake shake until combined. 
  3. Add ice to your favorite cocktail glass and strain the cocktail over the ice. Add freshly sliced strawberries and extra mint to garnish. Cheers!

Ingredient Substitutions: 

One reason that you’ll love this recipe is that it’s easily customizable. 

No strawberries? Try raspberries or blackberries! straight on photo of garnished cocktail

No seltzer? I absolutely love using ginger beer instead for extra flavor. 

No simple syrup? Use agave, maple syrup…whatever floats your boat! 

Want to jazz it up? Use coconut rum instead of white rum for a more tropical feel!

Want it a bit more moody? Add dark rum instead. 

Making Ahead of Time: 

You can absolutely make this cocktail ahead of time – store it in the cocktail shaker (with the lid on!) in the fridge. Just be sure to WAIT to add the ice until you’re ready to pour it in the glass and drink it. You don’t want it to be watered down! 

Mocktail Version: 

To make this a drink without alcohol, just omit the rum and add more seltzer or whatever fizzy drink you choose! Taste and be sure to adjust to add more sweetener if needed.

Ingredients

  • 1/4 cup fresh diced strawberries (plus more for garnish)
  • 1/2 lime, thinly sliced (and more to garnish if desired) 
  • 7-8 mint leaves (plus more for garnish)
  • 1 oz simple syrup (or agave, maple syrup etc.)
  • 1.5-2 oz white rum 
  • seltzer, club soda, any fizzy carbonated drink to top it off

Instructions

  1. Slice the strawberries and the lime. Add the diced strawberries, lime and mint to a cocktail shaker. Use the back of a spoon to muddle these together until they are mixed well and are juicy and combined!

  2. Add the simple syrup and white rum to the cocktail shaker. Add the lid on the cocktail shaker and shake to combine!

  3. Add ice to your favorite cocktail glass Strain the cocktail shaker over the ice. Top with a fizzy pour of seltzer or club soda. Garnish with additional strawberries slices and mint. Enjoy! 

Recipe Notes

If you like your cocktails sweeter, you might want to taste the cocktail in the shaker BEFORE you strain it to make sure that the drink is sweet enough for you. I liked 1 oz of simple syrup, but 2 oz might be more your preference! 

To make simple syrup at home: In a pot, bring 1 cup of boiling water to a boil. Add in the 1 cup of sugar. Stir to combine and then take it off the heat. Let it cool completely - place in fridge if you wanna cool it super fast!
