Quick and Easy Creamy Coleslaw

This quick and easy coleslaw is creamy, crunchy, light and perfect as a side dish for your Summer BBQ!

Coleslaw is always one of my go-to side dishes to make to bring to any gathering. At least with coleslaw in tow, you have a pretty healthy veggie filled dish that you can load your plate up with.

I remember when I was young not enjoying coleslaw at all. Every kind I always had either at restaurants or pre-made from the grocery store was always filled with waaaay too much sugar! Not to mention, it was overly creamy! I never thought I would ever discriminate against the creaminess of a food, but, man did those places load up their coleslaw with mayo!

But, I get it. I feel like coleslaw can be such a hard thing to perfect, especially since everyone likes it differently. Some really do like it chopped super finely and drowning in mayo, some like big and chunky slices of veggie with a more vinegar based dressing.

For me, after years of trying out different kinds, I like it somewhere in the middle. My coleslaw has to be creamy. Not anywhere like drowning in mayonnaise, but pretty dang creamy. Side note: I could never imagine myself as a person who didn’t like mayonnaise. I’m pretty sure I probably eat mayo with at least 4 of 7 meals a week. Is that a Southern thing?! I have no clue but I’m here for it, ya know?

Next, I like mine loaded with veggies. While buying a bag of pre-cut coleslaw mix is a super pro tip for saving time, I always have cut my cabbage on my own. I love using red cabbage specifically for this recipe. I love the chunky pieces of it, along with the slight spice it brings! In this recipe, I also add green onions! They are much less intense than regular onions, and they provide a slightly sweet flavor which replaces any added sugars.

Lastly, because coleslaw needs a little bit of acidity in my opinion, I add a splash or two of apple cider vinegar. Which basically makes this coleslaw a superfood, right? Right. Ha! I love the tanginess it adds to the coleslaw. It combines with the spices and the mayo so well and really just adds to the entire dish by giving it a little kick!

My favorite way to eat this coleslaw is by the spoonful. Ha! Just kidding. Kind of. But really, I eat this as a side dish next to a burger, or I pile it on top of a hot dog! It’s wonderful as is or as a topping on something.

I think this is how I will eat it on Memorial Day. Oh yes, loaded on a hot dog with BBQ chips on the side. Not pictured: the chili, mustard and onion that will soon be put on this hot dog as well. That’s how we do it in North Carolina!

Quick and Easy Creamy Coleslaw

This quick and easy coleslaw is creamy, crunchy, light and perfect as a side dish for your Summer BBQ!

Ingredients

  • 1/2 head red cabbage
  • 2 stalks green onions
  • 3 tbsp mayonaise
  • 2 tbsp apple cider vinegar
  • salt and pepper to taste

Instructions

  1. Chop your cabbage into long thin strands. Place into a large bowl. Dice your green onions and add to the bowl as well. Add in your mayo, apple cider vinegar. Mix together until well combined. Add salt and pepper to taste. 

  2. Let cool in the refrigerator for 30 minutes to an hour. Enjoy!

Recipe Notes

If you want your coleslaw to be extra creamy, add an additional tablespoon (or two) of mayo.
