Peach Coconut Mojitos

Peach Coconut Mojitos are the ultimate Summer beverage! They’re light, sweet and so refreshing.

Happy Thursday, y’all! And what better way to celebrate the weekend almost being here than to post a new cocktail recipe!

Why You’ll Love This Cocktail: 

  1. Hello! It’s peach season! Peaches are the juiciest ever right now which makes these the STAR of the show in this beverage. 
  2. If you’re not a huge cocktail fan but love sweet beverages, this one’s for you! It uses coconut rum which is naturally sweeter than most liquors. 
  3. The mint adds such a FRESH flavor to this drink! You have the classic flavors of a mojito – the mint, the lime and the club soda but super unique with the added peaches! 
  4. It’s so easy to whip up. Nothing fancy needed, only a handful of ingredients and you’re set!
  5. In this Summer heat, we all wish we were sipping on something refreshing and cold. This is the perfect drink for that! 

Ingredients You Need: 

  • Fresh ripe peaches 
  • Fresh lime 
  • Fresh mint 
  • Coconut Rum 
  • Ice 
  • Simple Syrup or sweetener of choice (can use agave syrup) 
  • Sparkling water/Club soda (if desired) to garnish

How to Make Peach Mojitos: 

 

I find it best to go ahead and set out all of your ingredients that you’re going to be working with.

Grab your peach – be sure it’s ripe but not OVERLY ripe. You want it sweet but not meal-y. 

Slice half of the peach into bite size chunks and add to a cocktail shaker. If you don’t have a cocktail shaker, you can just use a mason jar!

Dice or just rip some leaves into more bite size pieces into the shaker. 

Squeeze half of a lime in the jar.

Now that your main ingredients are in the jar, it’s time to mash them up! You want them to be peach preserve consistency – so really get in there and mash it up! Use a spoon, muddler, whatever floats your boat.

Next, add in the coconut rum followed by some simple syrup or your sweetener of choice. 

The end result should look something like this:

Add the top to the shaker (or jar!) and shake it up! 

Grab your favorite cocktail glass and add ice if desired. 

Time to strain the cocktail into the glass! It’s the most beautiful delicate peach color.

At this point, feel free to add either club soda or sparkling water to the top for bubbly carbonation – I used a Lime LaCroix! 

You must garnish with a fresh peach slice and a sprig of mint for extra beauty because there is something just so extra nice about sipping on a pretty cocktail. 

And thaaat’s it! Told you it was pretty easy huh? Enjoy! 

Best Tips/Substitutes:

If you don’t like ice in your cocktails, feel free to add the ice TO the skaker/jar when you’re shaking it up. This should help make it colder. 

You can use frozen peaches for this drink, just make sure to thaw them ahead of time before you add them to the shaker. 

Not a fan of coconut rum? Feel free to use white rum instead – just know that it will become just a normal peach mojito without the coconut flavor. 

Highly recommend using FRESH lime for this recipe – not lime juice from concentrate. It makes a huge difference!

I always recommend tasting and adjusting if needed. For instance, my husband likes a little bit of a stronger drink – so he might add more rum. If you like things extra sweet, add more simple syrup etc. 

Make a big batch of simple syrup for this recipe and use it all weekend for your cocktail needs!

Peach Coconut Mojitos

Peach Coconut Mojitos are the ultimate Summer beverage! They’re light, sweet and so refreshing.

Ingredients

  • 1 and 1/2 oz chilled coconut rum
  • 1 oz simple syrup (store-bought or homemade)
  • 8-10 fresh mint leaves
  • 1/2 fresh lime, squeezed 
  • 1/4 cup freshly diced peach (make sure peach is RIPE!)
  • 3-4 oz club soda or seltzer to garnish
  • fresh mint and peach slices to garnish 

Instructions

  1. Dice up the ripe peach into bite size pieces and add to the cocktail shaker - you want about 1/4 to 1/3 cup cup of peach. Add the mint as well and using a muddler, muddle it up for a minute or so until it's fully combined.

  2. To the cocktail shaker, go ahead and add in the coconut rum, simple syrup and fresh lime. Place the lid on the shaker and then SHAKE it up! Shake shake shake for 20 seconds or so.

  3. If desired, add crushed ice to a cocktail glass. Strain the drink over the ice. Top with club soda or seltzer until fizzy and delicious. Garnish with a fresh peach slice and a sprig of mint. Enjoy!
