This No Churn S’mores Coffee Ice Cream is loaded with your favorite s’mores ingredients like marshmallows, graham crackers, chocolate chips and has a cinnamon coffee swirl! It’s the easiest Summer treat! 

Ice cream has always been one of my favorite desserts. Especially if it’s accompanied by a warm Dark Chocolate Truffle Brownie! I love how cool, refreshing and deliciously sweet it is.

There is this amazing local ice cream shop here in Burlington called Smitty’s. It’s located downtown and it’s the quaintest shop where you can smell the homemade waffle cones 2 blocks away! Once you’re there, you have the choice to sample the flavors. Some of my favorites in the past have been the cookie dough, banana pudding, dark chocolate or brown sugar oatmeal! However, my all-time favorite is the coffee oreo! It’s loaded with a smooth coffee flavor and then studded throughout with chunks of soft oreo cookies. It’s swoon worthy.

Even though I truly wanted to recreate that recipe (and maybe I will one day..) I figured that I would give my husband a break from the oreo desserts and make this No Churn S’mores Coffee Ice Cream! *cue clapping*

Y’all. This ice cream is what dreams are made of! First, it’s made with a super de duper easy no-churn base (because let’s be honest, not all of us have room for a huge ice cream maker). Second, it’s so extra creamy and loaded with all of your favorite s’mores toppings! Not to mention it has a perfectly delicate coffee flavor that’s never overpowering. To reduce the added liquid in this No Churn S’mores Coffee Ice Cream, instead of using actual coffee as a base, I used Delallo Instant Espresso Powder! It gave the ice cream the perfect coffee flavor. 

Another delicious add in for this ice cream is cinnamon swirl! It makes it taste extra cozy, a little spicy and it helps balance out the richness of the ice cream. 

Lastly, and most importantly, you have your all time favorite s’mores toppings! Mini marshmallows, cinnamon graham crackers and chocolate chips! When all of these are packed into the ice cream base, you get a sweet, deliciously creamy perfect No Churn S’mores Coffee Ice Cream! 

Let’s get into how to make it! 

Ingredients You Need for No-Churn S’mores Coffee Ice Cream:

  • heavy whipping cream 
  • sweetened condensed milk 
  • vanilla extract 
  • cinnamon graham crackers 
  • chocolate chips 
  • mini marshmallows 
  • cinnamon 
  • instant espresso powder 

How to Make No Churn S’mores Coffee Ice Cream:

In a large bowl, add one pint (2 cups) of the heavy whipping cream. Using a hand mixer, mix on medium speed until the cream has stiff peaks (it’s able to stand up on its own). It should look something like this:

This took me about 3-5 minutes with my hand mixer! Once it’s mixed, set aside for a moment. In another bowl, mix together the sweetened condensed milk with vanilla extract.

Gently and slowly (a little bit at a time) fold in the whipped cream into the sweetened condensed milk with a rubber spatula. You don’t want to over mix it! 

Once it’s all mixed together, add in your graham cracker crumbles, mini marshmallows, chocolate chips, cinnamon, espresso powder, and a pinch of salt. Gently mix all of these together. Taste. If you prefer more coffee flavor, add another tsp or so of espresso powder. If you like more graham cracker crumbles in your ice cream, add more! This is a very customizable recipe to your s’mores loving needs!

Next, add to a freezer friendly glass or metal dish (a loaf pan worked for me!). I had seen many people say that a glass pan didn’t work as well freezing as a metal pan did. I did use a glass pan and it worked fine! It’s totally up to you though. Cover and let this freeze for at least 6-8 hours – I let mine freeze overnight and it was the perfect consistency!

Btw – the base of this recipe was totally inspired by Food Network’s no churn ice cream base recipe! It’s totally not a concept I take credit for – However, as you can tell, I tweaked it and made it my own! 🙂

Ingredients

  • 2 cups heavy whipping cream
  • 1 tsp vanilla extract
  • 1 14 oz. can of sweetened condensed milk
  • 1 cup crushed cinnamon graham cracker crumbles
  • 1 cup mini marshmallows (can toast if desired)
  • 3/4 cup chocolate chips
  • 1 tsp cinnamon
  • 1-2 tsp instant espresso powder (depending on preference of coffee flavor!)

Instructions

  1. In a large bowl, using a hand mixer on low-medium speed, beat the whipped cream until stiff peaks appear. This took me about 3-5 minutes. Set aside.

  2. In another bowl, whisk together the sweetened condensed milk and the vanilla extract. Slowly and gently fold the whipped cream into the condensed milk a little at a time. Use a rubber spatula to combine.

  3. Once the ice cream base is fully combined, add in your mix-ins. Add the graham cracker crumbles, chocolate chips, mini-marshmallows, cinnamon and espresso powder. If you like extra coffee flavor, add 2 tsp of espresso powder vs the 1. Mix gently to combine.

  4. Add this to a freezer safe pan or container and freeze, covered, for at least 6 hours or until creamy and "soft serve" like. Enjoy!

    I can’t eat a lot of ice cream, and usually go for nice cream, but boy, do I want a scoop of this right now! Love the coffee/s’mores combo and the texture looks super creamy! Great recipe Haylie! Happy weekend!
