These No Bake Cookies are the perfect blend of nostalgia and delicious! Not to mention they only require a few ingredients and are done within 15 minutes! They’re the very best cookie!
I have such a wonderful back story with these No Bake Cookies that revolves around my Aunt Robin. She is one of my favorite people in the world; She used to watch my brother and I during the summers. Robin always made me Cinnamon Toast waffles for breakfast. During hide and seek, she would even go as far to help my cousins, brother and I find the best hiding spots.
This recipe also comes directly from her. She has been making these for family get togethers since I can remember. In fact, at my Granny’s 80th birthday party back in November, she didn’t make them and my brother and I literally almost had heart attacks. It was devastating.
I don’t know what it is about these cookies. They’re thick, full of delicious cocoa flavor and loaded with oats. They melt in your mouth and it’s hard not to put 5 cookies on your dessert plate. (Y’all have a dessert plate at family gatherings, right? That’s like, the size of a dinner plate? Yeah me too.) Not to mention, I literally always take some home with me.
These are the best no bake cookies ever. And they’re the most simple! Let me tell you how to make them.
Basic Ingredients for No Bake Cookies:
- salted butter
- granulated sugar
- peanut butter
- quick oats (or old-fashioned!)
- cocoa powder
- vanilla extract
- whole milk
They basically sound like a health food, don’t they?!
How to Make No Bake Cookies:
- First, I highly recommend getting all of your ingredients measured out FIRST and setting them all out where they are easily accessible. I also recommend going ahead and having 2 baking sheets lined with aluminum foil, parchment paper OR silicon cookie mats. This recipe is a little bit time sensitive and just a minutes time can make a world of difference in the texture of your cookies.
- Next, on medium high heat, melt your butter in a large saucepan. Once it’s melted, immediately stir in your cocoa powder, sugar and milk! Continue cooking AND stirring this until the mixture comes to a rolling boil.
- Once it begins boiling, let it boil for 2 full minutes. I suggest setting a timer! This will make sure the oats are actually cooked as well as thickening the mixture itself.
- Next, remove the pan from the heat completely. This is where it comes in handy to have the other ingredients ready to go. You want to immediately stir in the peanut butter and vanilla. I make sure that’s all combined and smooth. Lastly, I stir in my oats!
- Using either a tablespoon or a cookie scooper, scoop your cookies out onto the lined baking sheets. I preferred the spoon method because you’re able to make bigger cookies that way! Feel free to slightly flatten and shape them with a fork for them to be more “uniform” round cookies.
- Now, you wait! Let them cool either at room temperature or if you’re impatient, pop them in the fridge for a good 15 minutes or so. They will harden slightly and set. Now, you can devour!

Ingredients
- 1/2 cup salted butter (1 stick)
- 1 tsp vanilla extract
- 1/2 cup creamy peanut butter
- 1/2 cup whole milk
- 1/4 cup unsweetened cocoa powder
- 3 cups old fashioned or quick oats
- 2 cups granulated sugar
Instructions

Begin by prepping all of your ingredients and have them readily accessible. This includes lining 2 baking sheets with parchment paper or silicon cookie sheets.

Next, in a large saucepan on medium high heat, melt your butter. Add in your cocoa powder, sugar and milk next and whisk together to incorporate. Let this cook and come to a rolling boil. Once it's boiling, let it boil for 2 full minutes. Set a time if needed. This will ensure that the mixture thickens and cook the oats.

Once it's boiled for 2 minutes, take it off the heat immediately. Stir in your peanut butter and vanilla extract. Mix until smooth. Lastly, add in your oats and mix together until incorporated.

Once your cookie mixture is all mixed, using a tablespoon or large cookie scoop, scoop out about 1-2 tbsp worth of mixture per cookie. Feel free to lightly flatted and shape them into round neat cookies using a fork.

Let them harden and set for about 15 minutes, either in your room temperature kitchen OR if you want them to be set quicker, place them in your refrigerator.
Dessert plate? Yes please! Round 1 is dinner, round 2 is dessert 😉 I can see why you guys were so upset when you didn’t have these cookies one year! They look and sound DELICIOUS! And no bake? Ain’t no going wrong there, my friend! Pass me a baker’s dozen 🙂 !
