Is carrot cake your favorite but you’re always too lazy to make the whole cake? SAME! Good thing you can easily make these easy no bake carrot cake energy bites. They require NO baking but deliver the same irresistible carrot cake flavors that you know and love!

Happy Monday, friends! Wow. It’s been an insane weekend. On Saturday, we moved out of our rental and into our brand new house that we own (!!!!) I’m finally able to be in a functioning kitchen again that has more in the fridge in it than a sprig of cilantro and old jam. I’m so pumped!

My new kitchen is probably at least TWICE the size of my old one and I have an awesome new work space. Can’t wait to jump in and share tons of new recipes with y’all!

So….as y’all know, Spring is just around the corner. And when I think of Spring, I think of bright, delicious recipes. And I also think of delightfully sinful recipes like a three layer carrot cake with cream cheese frosting.

But let’s be honest, some of us aren’t the best bakers OR we just don’t have the time to whip out a cake. Or the self control to not eat the entire cake by yourself. Okay, I just fully described myself. Thank you for listening.

So I created these carrot cake energy bites! They take WAY less time. Aka you throw all of the ingredients into a food processor and roll them into bite size balls. Easy enough, right? However, they still retain all of the classic flavors that you love!

They’re sweet, have a chewy texture thanks to the oats + nuts, coconut flakes, and have a bit of spiciness to them thanks to cinnamon, ginger and nutmeg. They’re truly a bite of deliciousness and it took a lot of self control to not just eat every single one.

The best news is? These have NO refined sugar in them. Seriously. They are only sweetened with…..DATES! Yes, beautiful little chewy sweet Medjool dates. They’re wonderful and make these just the perfect amount of sweet to balance out the other flavors.

These are perfect to eat pre/post workout, for a snack, with your lunch or for dessert! Anytime you need a quick pick me up – these are right up your alley. I love them. I hope you do too!

No Bake Carrot Cake Energy Bites

Prep Time 10 minutes
In the Fridge 15 minutes
Total Time 10 minutes
Servings 12 people

Ingredients

  • 1 cup quick oats
  • 1/2 cup grated carrots
  • 1 cup pitted Medjool dates
  • 1/4 cup unsweetened coconut flakes (chopped)
  • 1 tsp vanilla extract
  • 1/4 cup chopped nuts (i used almonds, but walnuts/pecans would work!)
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

Instructions

  1. Soak your dates in hot water for 10 minutes to soften them. Once soft, add them to a food processor (leave the water on the side). Blend into it becomes a slight paste. 

  2. Add the other ingredients to the food processor and blend until it forms a sticky dough. 

  3. Using a cookie scoop, roll your bites into about a 1.5 inch size ball. After they're all rolled, put them in the fridge to let them sit for 15-30 minutes. Enjoy!
