At this point, y’all know my love of berries! While Summer is  probably my least favorite season (thanks North Carolina heat), the produce we have in Summer absolutely makes up for the fact that I can’t even walk outside without breaking a sweat HA!

We are smack dab in the middle of Summer right now and while other stone fruits are coming into play (hey peaches and cherries!) the berries are still going strong! So, for this extra easy dessert, I decided to play around and mix some berries together! I loved that the strawberries contributed a sweetness that can’t be matched, the blackberries added a hint of tartness and the blueberries were extra juicy! Together all wrapped up in a delicious pie crust, you get this Mixed Summer Berry Galette!

What is a Galette?

I think of a Galette as a de-constructed, less high maintenance pie. It uses pie crust as the foundation, you add berries (thickened with cornstarch) in the middle and then you fold the pie crust around the berries. It’s much easier than a normal pie and it feels like you’ve made something fancy when in reality you saved time! Win win!

You guys know that my favorite pre-made pie crust to use is Wewalka. I’ve been using their product for YEARS now and I feel so fortunate and blessed to be able to work with them! Their pie crust makes this Mixed Berry Galette an absolute breeze! I mean, it comes rolled in parchment paper for crying out loud – so easy. But honestly, I love Wewalka the most because they don’t skimp on the quality of their products – hello lard free, European style crusts!

The crunchy pie crust combined with the delectable sweet Summer berries and of course several large scoops of vanilla bean ice cream make this Mixed Berry Galette your new go-to dessert! So let’s get into how to make it already! 

Ingredients You Need for Mixed Berry Galette: 

  • fresh strawberries, blueberries, and blackberries 
  • wewalka pie crust 
  • cornstarch 
  • egg wash 
  • turbinado sugar 
  • vanilla ice cream (optional)

How to Make Mixed Berry Galette: 

Preheat the oven to 425! Begin to slice the strawberries long ways into thirds. Thankfully, you can just leave the blackberries and blueberries the way they are so strawberries are the only cutting you will have to do! I’m sure that’s a nice change from most of my recipes, right? Haha!

You will need about 4 cups worth of fresh berries. I used 2 cups of strawberries and then 1 cup blackberries, 1 cup blueberries. Place all of these in a large bowl and then add cornstarch, 2 tbsp of turbinado sugar. Mix GENTLY to combine! Set these aside as you prepare your crust.

Slightly roll out your pre-made pie crust onto a baking sheet. Remember, to use parchment paper if yours doesn’t already come with it! Place the berries in the middle of the pie crust (just make sure you aren’t putting in all of the juice from the berries!). Leave about 1.5-2 inches of pie dough to fold over the fruit!

Take the pie dough and gently fold it over the fruit – pinching the seams each time you fold to make sure that the berries stay in tact. 

Mixed Berry Galette ready to bake

Beat an egg gently to make an egg wash. Brush the crust with the egg wash generously. Sprinkle with 1-2 tbsp of turbinado sugar over top. 

Bake for 20-25 minutes or until the galette is golden brown. When done, let it cool for at least 20 minutes!

If ya know what’s good for ya, you MUST add vanilla ice cream on top! It tastes like the most delicious berries and cream pie you have ever had! It’s Summer personified in dessert form!

Mixed Berry Galette

Ingredients

  • 2 cups fresh strawberries, diced into thirds
  • 1 cup fresh blackberries
  • 1 cup fresh blueberries
  • 1 pre-made pie crust
  • 3 tbsp turbinado sugar, divided
  • 1 tbsp cornstarch
  • vanilla ice cream (for topping, optional)
  • egg wash

Instructions

  1. Preheat your oven to 425 degrees. Dice your strawberries into thirds and add them into a bowl with the blackberries and blueberries. To the bowl, add 1 tbsp turbinado sugar and 1 tbsp of cornstarch. Mix very gently until combined!

  2. Slightly roll out your refrigerated pie dough onto a baking sheet. Place the the berries (make sure not to add any berry juice) in the middle of the pie crust, leaving about 1.5-2 inches of pie dough to fold over the fruit. 

  3. Take the pie dough and gently fold it over the fruit, pinching the seams each time you fold to make sure the berries are held inside. Gently beat an egg to make an egg wash. Brush the outside crust gently with egg wash and sprinkle with 1 tbsp of turbinado sugar. 

  4. Bake for 20-25 minutes or until golden brown. Let cool completely (about 20-30 minutes). Enjoy with a scoop of vanilla ice cream!
