Loaded Greek Chicken Nachos

These Loaded Greek Chicken Nachos are SO good! Topped with the most flavorful and juicy Greek chicken, loaded with the best toppings all on top of warm and fresh pita bread. Yes please! 

Hi, we are all about comfort food this time of year and I’m especially bringing the comfort with these Loaded Greek Chicken Nachos! 

Because really – is there a better way to spend a Saturday afternoon than turning on your favorite show, popping open your favorite drink and indulging yourself in this deliciousness?! I think not! 

Why You’ll Love These Nachos: 

First off – who DOESN’T love nachos?! I especially love them as you can see on my blog I’ve created both Loaded Baked Chicken Nachos and these incredible Spicy Shredded Beef Nachos. 

But these are a different breed, y’all. Sometimes nachos can make you feel so loaded down and heavy after you’ve eaten them – but not these! 

The ultra fresh flavors that pop throughout each bite of this really make it something special. 

Let’s start of with the base – I could’ve easily used tortilla chips right…but why not fresh warm pita bread?! Yup. Seriously.

I could eat the pita bread just by itself – it’s warm, salty, chewy…just the best. But why not pile on the toppings? 

Like the best chicken souvlaki? I actually took the recipe from my beloved Chicken Souvlaki Pitas with Tzatziki Sauce so it was pretty simple to whip up. The chicken has so much flavor, is bright and is the perfect combination with the warm pita bread. 

The rest of the toppings can be up to you honestly but here are some of my favorite ideas. 

First, easy tzatziki sauce! DUH. You can’t have nachos without some type of sauce. This sauce is tangy, creamy, herby and oh so delicious.

I love adding feta cheese on there as well because once again, nachos without cheese is a travesty! 

And of course you must add all of those fresh veggies! I love adding spicy red onion, ultra juicy cherry tomatoes and fresh crunchy cucumber! 

Mixed all together you get warm, fresh, delicious, crunchy, juicy and YUMMY comfort food to the max. 

So let’s get into how to make these nachos!

Ingredients You Need: 

  • Chicken breast
  • Olive oil, oregano, salt, pepper, lemon juice 
  • Fresh garlic 
  • Tzatziki sauce (homemade or storebought) 
  • Cherry tomatoes 
  • Red onion 
  • Feta cheese 
  • Cucumber 
  • Pita bread

Best Nacho Making Tips: 

For this recipe, I would start off by making the chicken. It’s pretty simple – but I do recommend you let it marinate for at least 30 minutes to an hour before cooking. Trust me! The flavors will really develop in it!

Nearing the end of the marinade time, you can go ahead and start chopping up your preferred veggies! Or make homemade tzatziki sauce if you desire. I really do love my recipe but I’m all about convenience for these nachos so no judgement at all if you buy store bought! 

Once the chicken has nicely marinated, simply throw it into a pan and cook it up until it’s done! It will cook pretty quickly because it’s in bite size chunks.

While the chicken is cooking, I recommend warming up the pita bread! I put mine directly onto my oven but feel free to go ahead and chop them into small pieces and lay them down on a sheet pan. 

Once the pita is warm and chopped, the chicken is done…it’s time to assemble! 

I added the chicken first, followed by a few dollops of the tzatziki sauce and all of the veggies.

If you want an extra hint of brightness, squeeze some lemon on top. 

Grab a few napkins, turn on your favorite show, and you’re all set for a delicious meal! Enjoy, my friends!

Ingredients

Greek Chicken Marinade

  • 2 medium chicken breasts, about 1.5 lbs.
  • 4 cloves minced garlic
  • 2 tbsp olive oil
  • 2 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • juice of one lemon

Nacho Toppings:

  • 4-5 pieces pita bread, warmed and sliced into large pieces
  • 1/2 small red onion, diced
  • 1/2 english cucumber, diced
  • 1/2 pint cherry tomatoes, sliced in half
  • 1/2-3/4 cup of feta cheese
  • homemade or store bought tzatziki sauce

Instructions

Greek Chicken

  1. Cut your chicken into bite size pieces. Combine in a medium size bowl with the marinade ingredients. Let it marinate for at least 30 minutes to 1 hour.

  2. Once it's done marinating, grab a pan, place it on the oven on medium high heat and let it get hot. Once hot, add in the chicken and cook until completely cooked through, about 6-8 minutes, flipping and stirring some, or until chicken is cooked to an internal temp of 165.

Nacho Toppings

  1. While the chicken is marinating, feel free to chop up the toppings and/or make the homemade tzatziki sauce. Store bought is fine too! Preheat the oven to 350 or so to let it heat up.

  2. While the chicken is cooking, add in the pita bread. I added mine directly to the oven rack whole and then sliced it, but feel free to pre-slice it and warm it up on a sheet pan.

  3. Once warmed, load them onto a platter, add the chicken followed by the veggies and several generous dollops of tzatziki sauce. Squeeze with fresh lemon if desired. Enjoy!

  1. The first time I made these I followed the recipe exactly. It was absolutely delicious. The marinade is amazing. The next time I made it, I made some minor changes to give it more of a nacho vibe. First, I cut the pitas into triangles and warmed them in the air fryer until the started to crisp. I arranged them on oven proof plates and topped them with all of the toppings except the cucumbers and tzatziki. I also added a bit of shredded mozzarella to hold it all
    together and heated them in the oven just until the cheese melted. I finished them off with the cucumbers and tzatziki when they came out of the oven. Greek olives are a nice addition too.
