This Loaded Breakfast Board is the BEST! Similar to the beloved charcuterie board, this board is made with fresh golden pancakes, tons of fruit and even yogurt and yogurt alternative bowls! Serve with lots of coffee and you’re all set to have a fun morning at home!

Y’all! Okay, so, we know that the classic charcuterie board never goes out of style, right? If you’re anything like me, you can never say no to a variety of cheeses, cured meats and all the crackers. 

But, I think it’s important to spice things up a little bit every now and again and what better way to change your routine than to make your own Loaded Breakfast Board?!

What is a Breakfast Board? 

As mentioned above, a Breakfast Board is similar to a charcuterie board except loaded with all things breakfast! 

I purchased all of these ingredients at my local Publix in the dairy section! They are currently having an amazing Crave & Save promotion and lucky me, most of the ingredients I used in this board were on sale for this promotion!

Using delicious products like Horizon Organic® DHA Milk, So Delicious® Coconutmilk Yogurt Alternative, Two Good® Greek Lowfat Yogurt and of course, coffee galore with International Delight® Iced Coffee and Silk® Oat Yeah® Creamer, I was able to create the perfect board for a fun morning at home with my husband. 

For this particular board, I made homemade pancakes, adding on pancake toppings like peanut butter, hazelnut spread, and of course tons of fresh fruit. I also added on some yogurt options to make homemade yogurt and yogurt alternative bowls! 

The pancakes are incredibly fluffy, simple to make and turn out golden and delicious every batch.

I love how versatile these boards are! They are good for any lifestyle changes you might be making this year.

For example, in the New Year, I have been trying plant-based alternatives in place of dairy here and there. So, for me, using the So Delicious® Coconutmilk Yogurt Alternative was perfect as a base for my yogurt and yogurt alternative bowl. Same goes for my steaming hot cup of coffee – I used the Silk® Oat Yeah® Oatmeal Cookie Creamer and oh my word – talk about delicious!

But, if you’re like my husband who loves anything and everything dairy, you can opt for the Dannon® Two Good® Greek Yogurt and the International Delight® Iced Coffee in the Mocha flavor. He was happy and I was happy! Win win!

Alright, so let’s get into exactly what you need for creating the ultimate Breakfast Board! 

Ingredients You Need: 

  • All-purpose flour + whole wheat flour 
  • Baking powder + salt 
  • Sugar
  • Cinnamon
  • Melted butter 
  • Vanilla extract, egg 
  • Horizon Organic® DHA Milk
  • International Delight® Iced Coffee
  • Creamer of choice (I love the Silk® Oat Yeah® Oatmeal Cookie Creamer)
  • Individual size yogurts like: So Delicious® Coconutmilk Yogurt Alternative and/or Two Good® Yogurt
  • Fresh Fruit of your choice: bananas, strawberries, blueberries, raspberries etc. 
  • Pancake toppings: hazelnut spread, peanut butter, syrup, butter 
  • Yogurt and Yogurt alternative bowl toppings: honey, granola etc. 

How to Assemble Your Board:

Begin by making your pancakes. Thankfully, this is a super simple recipe! 

Start by whisking together the dry ingredients (the all-purpose flour, whole wheat flour, baking powder, salt, sugar and cinnamon) until they are combined in a large bowl. 

In a small bowl, melt the salted butter and let it cool slightly. 

To the dry ingredients, add in the butter, egg, vanilla extract and ultra-delicious Horizon Organic® DHA Milk. 

Use a wooden spoon to mix together until combined. It should look something like this:

Next, spray a nonstick pan with nonstick cooking spray (we don’t want anything to stick!) and add about ¼ cup’s worth of the batter into the pan. Let it cook for 2-3 minutes on one side, until small bubbles begin to form and then flip it over and let the other side cook. Repeat until the batter is all finished! 

Now that your pancakes are made, it’s time to assemble your board!

Take your warm pancakes and make sure to place them in the middle of the board. Surround with the fresh fruit, the yogurt and yogurt alternatives and your favorite toppings for the pancakes! 

And of course, what is a breakfast board without coffee?!? 

Be sure to pour a large cup of your favorite flavor of International Delight® Iced Coffee – don’t forget to add some ice in your cup before you pour! If you love hot coffee like me, make a French press and add your favorite creamer to it.

Grab a couple of plates and get ready to load it up with some delicious treats!

Best Tips for Breakfast Boards: 

If it’s just going to be you and your significant other like it was for me and my husband, don’t feel pressured to eat the entire board in one sitting! You can always package up the fruit and save the pancakes for another meal! Just place everything in a reusable container, stack it in the fridge and you’re all set!

Another tip I have is don’t feel pressured to make the most aesthetically pleasing breakfast board. This is such a joyful thing to make, so try and keep it fun! You don’t have to make it perfect for Instagram – it’s about the journey of making it, having fun and of course, eating it!

Lastly, here are a few other food ideas you can add onto the board if you feel so inclined: 

  • Crispy bacon 
  • Sausage links 
  • Cheeses
  • Buttery toast 
  • Waffles (if you prefer them to pancakes!) 
  • A bowl of soft scrambled eggs

Homemade Pancakes

  • 1 and 1/2 cups all-purpose flour

  • 4 tsp baking powder

  • 1/2 tsp cinnamon
  • 4 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 and 1/2 cups Horizon Organic® DHA Milk

Breakfast Board Essentials

  • Yogurt: So Delicious® Coconutmilk Yogurt Alternative, Dannon® Two Good® Greek Yogurt
  • Coffee: International Delight® Iced Coffee, fresh hot coffee, Silk® Oat Yeah® Oatmeal Cookie Creamer (or creamer of choice!) 
  • Fresh fruit: sliced banana, strawberries, raspberries, blueberries
  • Pancake Toppings: peanut butter, hazelnut spread, sliced butter, maple syrup 
  • Yogurt Bowl Toppings: granola, honey


  1. Whisk together the dry ingredients (all-purpose flour, whole wheat flour, baking powder, salt, cinnamon) in a large bowl. In a small bowl, melt the butter and let it cool slightly. 

  2. To the dry ingredients, add in the cooled melted butter, the milk, the egg and the vanilla extract. Mix with a spoon until just combined. 

  3. To a non-stick skillet or griddle, add butter or non-stick cooking spray. Add about ¼ cup worth of pancake batter at a time and cook on one side for 2-3 minutes or until small bubbles begin to form. Flip and cook the other side until it’s cooked through and golden. Repeat until batter is used up. 

  4. Once the pancakes are done, begin assembling your board! 

  5. Grab a large wooden cutting board and add on the pancakes. Surround the pancakes with fresh fruit, the individual cups of yogurt and all of the toppings. Pour some coffee, add cream if desired and enjoy! 

Recipe Notes

The pancake recipe should make about 12 medium size pancakes or 8 large pancakes, depending on how big you like them.

If you don’t eat everything on the board, no worries! Pack it up in reusable containers and store it in the fridge for the next day!
