Loaded Avocado Chicken Salad

This Loaded Avocado Chicken Salad is the BEST easy lunch idea! It’s incredibly light, refreshing and best loaded into a bowl or onto a piece of toasted bread. 

Alright y’all. It’s officially Spring in North Carolina. Which means that we have approximately 2 weeks until the temperatures begin to skyrocket into intensity. 

By the way, 1 of those 2 weeks are filled with a layer of pollen so thick that everything around you is yellow. But boy, do I love Spring! 

And boy do I love this meal! 

Why You’ll Love This Dish: 

When warmer weather hits, I always have such an intense craving for simple, light and refreshing foods. I don’t really want to turn on the oven or even the grill to be quite honest. I want something I can whip up easily and then snack on for the next couple days if I want. 

Enter in this chicken salad. 

This is not your average chicken salad! I’ll be the first to admit that I love mayonnaise more than the average person. But one thing I love about this chicken salad is that it isn’t just SATURATED with mayonnaise. 

What makes this delicious salad creamy? You guessed right! The avocado! (An avocado…thanks! Anyone catch that reference? Lol!)

The avocado creates this delicious creaminess in the chicken salad as well as it adds some fat that the mayonnaise would’ve to make it extra delicious. There is a tiny bit of mayo in it that helps bind everything together but for the most part, the avocado does all of the work! 

It’s also SO easy. I used a rotisserie chicken for this which helped really minimize the effort involved in the recipe. Yes please!

We also have just the BEST ingredients mixed in. One thing that I love about this salad is that it is super versatile and you can add really whatever you want or might have in your fridge that you think would work well with it.

But, if you want to follow the recipe, I personally really love to add spicy red onion, some crunchy fresh corn (you can do fresh off the cob or canned!) and some fresh herbs! 

It makes it incredibly fresh and ultra delicious! You can load it high on a delicious toasted piece of sourdough OR into a big bowl and eat it with crackers. I love it both ways. So let’s get into what you need to make it! 

Ingredients You Need: 

  • Rotisserie Chicken 
  • Avocado 
  • Red Onion 
  • Cilantro 
  • Sweet Corn 
  • Mayo 
  • Salt + pepper 

Best Tips for Making Avocado Chicken Salad: 

Begin by shredding up the rotisserie chicken. You want it in large shreds. Once shredded, place it in a large bowl. 

Dice the red onion into small pieces as well as the avocado. 

Add in the sweet corn – for ease, I used canned corn but when it’s fresh corn season, I’m all for just chopping it right off of the cob!

Roughly chop the cilantro and season with salt and pepper. Add in the mayo and stir together.

Taste and adjust the seasoning if needed! Sometimes I like to add a dash of cayenne pepper to mine for some spice or sometimes some garlic power as well. Season with your heart!

And once you’re done, it’s time to eat! You can always let it sit in the fridge for 30 minutes or so to let the flavors meld together but y’all – I’m pretty sure I started eating it right out of the bowl when it was done. It’s that good! 

Storing leftovers: 

You can store the leftovers in a tightly sealed tupperware bowl for up to 2 days. I would say longer but the avocado could get a little brown. If desired to perk it up, add a squeeze of fresh lemon the next day!

Ingredients

  • 1 medium avocado, diced into bite size pieces
  • 2 cups rotisserie chicken, diced or shredded 
  • 1/2 cup diced red onion 
  • 1/4 cup chopped cilantro 
  • 1/3 cup sweet corn (can use canned or fresh)
  • 1 tbsp mayonnaise
  • Salt, pepper to taste
  • crackers to serve with

Instructions

  1. Dice the red onion, the avocado into bite size pieces and roughly chop the cilantro. Set aside. Dice or shred the rotisserie chicken.

  2. Add all of the ingredients into a bowl. Add mayonnaise along with a large pinch of salt and pepper. Mix together and taste. Adjust for seasoning if desired - sometimes I like to add a little garlic powder or cayenne pepper to mine!

  3. Eat in a bowl with crackers or loaded on top of a piece of toast. Enjoy!

Recipe Notes

To store, place in tightly sealed container in fridge for up to 2 days. For leftovers, squeeze either fresh lemon or lime juice on top to help freshen it back up!

    1. Hi Lacie – did you mean keto friendly? If so, I think if you remove the corn it should be more keto friendly. Not sure though as I’ve never done the keto diet! I also don’t include calories/nutrition on my blog – so sorry about that!
