Real talk: How is your Summer going, friends? For me, I feel like it’s absolutely flying by! How in the world is July almost over already?!? I would say things will slow down come August but I think they will rev back up even more! The first week in August, we are going to the mountains with my husband’s family for a week. The rest of August is a blur with church volunteering, birthdays, etc and all coming to a head for my brother and his fiancee’s wedding during the first week in September! SO EXCITING! 

Summer = Snack Foods

During the Summer months, when I seem to be super busy… I am so all about snack food. Instead of making a 5 course meal during the weekends, I’d much rather make a cheeseboard, curl up on the couch and snack my heart away while watching my favorite show. Anyone else with me?

Dips are the exact same way. Like, give me a yummy dip along with a pack of crackers and I’m set for the evening! Enter this Lightened Up Spinach Artichoke Dip! I’m all for the super cheesy, super dairy filled dips…but I love how this one has been lightened up for Summer!

For this Spinach Artichoke Dip, instead of the normal sour cream and mayonnaise that is used in this classic recipe, I opted to use hummus (an entire container!) and greek yogurt! There is a dash of cream cheese in this, but it can be left out if desired!

I love a good blitz it in the food processor dip and it’s done – however, I ended up baking this one! Thank goodness the heat has fallen today so I could turn on my oven in peace HA! I loved how the dip got so warm. It made eating it that much more cozy and it made the dip super smooth, creamy and luscious!

I’m obsessed. So let’s get into how to make it! 

Ingredients You Need for Lightened Up Spinach Artichoke Dip: 

  • spinach 
  • canned artichokes 
  • plain hummus
  • greek yogurt 
  • fresh garlic 
  • cream cheese 
  • lemon 
  • salt, pepper, red pepper flakes 

How to Make Lightened Up Spinach Artichoke Dip:

Like I said before, I love that this is just the easiest blitz away recipe! First, it’s always best to preheat your oven. And don’t forget this step because then you will have eaten the chilled dip before the oven has preheated you know? Not that I know from experience or anything…

So…I’ll take you step by step. Place the spinach, canned artichoke hearts, greek yogurt, the entire container of hummus, minced garlic, cream cheese and lemon in a food processor or a high powered blender!

Blend until creamy and smooth. Taste and adjust the seasoning if needed!

Grease a pan (I used an 8×8) and then add the dip directly into it. Bake for 15 minutes, uncovered. Broil for 1-2 minutes – watching carefully! Y’all know how broiling can be – one minute you’re all good and the next second the fire alarm is going off.

Garnish with herbs on top, more spinach, sliced lemon or just eat it straight out of the dish it was baked in while standing over top of the oven with delicious crackers. Yup. 

ALSO! Pro tip: this dip is wonderful on top of eggs, quesadillas, tacos etc. It’s a flavor bomb!

Lightened Up Spinach Artichoke Dip

Ingredients

  • 1 and 1/2 cups fresh spinach
  • 1/2 cup canned artichoke quarters
  • 1 10 oz container plain hummus
  • 1/3 cup greek yogurt
  • 1 oz cream cheese
  • 4 cloves garlic, minced finely
  • 3/4 tsp fresh lemon juice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp red pepper flakes (optional for some spice!)

Instructions

  1. Preheat the oven to 400 degrees. Next, mince the garlic finely!

  2. To a food processor (or high powered blender!) add the spinach, drained artichoke hearts, greek yogurt, hummus, garlic, cream cheese, lemon juice and spices! Blend until smooth and creamy.

  3. Taste and adjust seasoning (add more salt or pepper) if desired! 

  4. Grease a pan and add the dip directly into it. Bake for 15 minutes and if desired for a more colorful top, broil for 1-2 minutes, watching carefully!

  5. Garnish with roasted chickpeas, more spinach or lemon if desired! Eat immediately with lots of crackers and enjoy!

    We enjoy spinach artichoke dip in our house! Love that you lightened this one up with hummus and yogurt. I’ll have to give it a try! Also loving those crackers for dipping. Need to see if I can get those around here!

    I’m set with dip and chips or crackers too! I could easily make a meal out of it, especially if it looked as good as this! Just in time for weekend eats too 🙂 Creamy dreamy delish, my friend!
