These Hawaiian BBQ Bacon Burgers are loaded with juicy fresh pineapple, crispy bacon and homemade BBQ sauce! They’re the best Summer meal!
I feel like if there was one food to describe all of America – it would be a cheeseburger. There is something so classic, iconic even about the delicious sandwich. From the juicy patty, to the melted (probably processed) cheese on top and loaded with your favorite toppings – it’s just SO DELICIOUS.
Burgers + Father’s Day: Sweet Memories
That’s why I love celebrating Father’s Day with burgers! Like my Dad, they are so classic, reliable and you can always depend on them to be there for you. Too much of a stretch?! LOL! But really, one of my favorite memories of my Dad is him grilling burgers for me when I was little. We would always pair them with BBQ potato chips and drink soda and watch Jeopardy and Wheel of Fortune. It was a wonderful time. Unfortunately, I don’t get to see my Dad as often now since we live so far away from each other. I always cherish the memories we made when I was younger though 🙂
But enough of the sappiness, let’s talk about these Hawaiian BBQ Bacon Burgers. They are SO mouth wateringly delicious, y’all!
These Hawaiian BBQ Bacon Burgers start out with a perfectly soft and fluffy brioche bun (duh!). On this brioche bun, you place a deliciously juicy, perfectly seasoned angus beef patty with 2 slices of the meltiest mozzarella ever. You proceed to smother said cheeseburger patty with the tangiest homemade BBQ sauce. Then, you top it with a slice of sweet and fresh pineapple as well as crispy bacon. Add spicy red onion, place the brioche bun on top and DEVOUR.
Sound yummy enough?!? Let’s get into how to make them!
Ingredients you need for Hawaiian BBQ Bacon Burgers:
Burgers:
- ground beef
- homemade bbq sauce
- minced garlic
- salt and pepper
BBQ Sauce:
- reduced sugar ketchup (i love the hellman’s that is sweetened with honey!)
- worcestershire sauce
- apple cider vinegar
- garlic powder
- hot sauce
- paprika
- honey (optional)
Burger Toppings:
- fresh pineapple
- red onions
- bacon
- mozzarella cheese
- broiche buns
How to Make Hawaiian BBQ Bacon Burgers:
Begin by making homemade BBQ sauce. Combine the ketchup, worcestershire sauce, apple cider vinegar, hot sauce, garlic powder and salt and pepper to taste in a bowl. Mix and adjust seasonings if needed (if it’s too tangy, add more ketchup – not vinegary enough? Add more ACV) and set this aside.
In a large bowl, combine your beef, minced garlic, salt, pepper and a couple tbsp of the bbq sauce and mix together. Form three slightly thin ⅓ lb patties and set these aside.
Slice the burger toppings! Slice your pineapple and red onion and restrain yourself from eating the pineapple you just cut. #sogood #sosweet
In a large cast iron skillet, fry the bacon until your desired crispiness is achieved. I personally love my super crispy so the longer the fry, the better! Once done, place on a plate with a paper towel to help get the extra grease off. Pour out most of the bacon grease in the cast iron skillet and once your pan is hot, add in your burgers! Cook them on one side for about 3-4 minutes and then flip and do the same on the other side for an additional 3-4 minutes. Basically, cook until desired “done-ness” is achieved – I prefer mine on the medium well side, my husband likes medium rare. Also, if you have a meat thermometer, that’s extremely helpful! I cooked mine until the internal temp was about 170 degrees.
Once it’s cooked through, add your cheese on top of the burger and place a lid on it to make sure the cheese is fully melted!
Annnnd now it’s time for assembly! Toast your brioche buns (if desired), spread a generous amount of the BBQ sauce on the top bun. Place your burger patty on the bottom bun. If you wanna get even crazier, add some MORE BBQ sauce on the burger. Add your slice of pineapple on top of the burger as well as the bacon. On the top bun, add sliced red onions.
Place it all together and get ready for probably the messiest but most delicious burger of your life. Have several napkins ready. Enjoy with potato chips, french fries and/or a cold beer!

Ingredients
Burgers
- 1 lb ground beef
- 2 cloves minced garlic
- 1.5 tsp salt
- 1 tsp cracked pepper
- 2 tbsp homemade BBQ sauce
Homemade BBQ Sauce
- 1/2 cup reduced sugar ketchup
- 1-2 tbsp worcestershire
- 1 tbsp apple cider vinegar
- 1/4 tsp garlic powder
- 3-4 dashes hot sauce
- 1/8 tsp smoked paprika
- salt and pepper to taste
Burger Toppings
- 3 brioche buns
- 1/2 red onion sliced
- 3 slices fresh pineapple
- 6 slices of bacon
- 3-4 slices mozzarella cheese
Instructions

Slice the pineapple and red onion into slices to fit your burger bun as well as any other toppings you may enjoy.
