Y’all. I’ve been wanting to create my own tomatillo salsa for the blog for SO long now. It all started after I had this incredible tomatillo salsa at a local Mexican restaurant.
Now you know I love my beloved Easy Homemade Salsa but this just hit differently. It was so flavorful, spicy, colorful and FRESH. I found myself wanting to drizzle it all over everything and yes, definitely eat my weight in fresh salty tortilla chips with it!
And that’s exactly how I feel about this delicious Grilled Tomatillo Salsa Verde!
Why You’ll Love This Salsa:
First off – it has SO much dimension of flavor. Yes, as the recipe title states, it is Grilled – but it’s also slow roasted!
I love the grilled aspect of this recipe – it adds a TON of flavor and char. I love the grill marks and heat it adds to the raw ingredients.
Then, when you transfer them to a hot oven and let them start roasting, it’s a slow game of really extra caramelization in the oven, really cooking the insides of each ingredient.
It’s the perfect storm!
And then after you roast them, it’s so easy! All you have to do is grab a HEAT-SAFE blender. Hello simplicity. You just blend it up and pour it up in a bowl.
It’s spicy, juicy, fresh, and so full of flavor. I’m obsessed. It’s the perfect appetizer for Taco Tuesday, a perfect weekend snack while watching your favorite TV show or the best salsa verde to add to the 2 Ingredient Salsa Verde Chicken!
So let’s get into exactly what you need to pick up at the store to make this. Cuz you’re going to make it, right?! Right!
Ingredients You Need:
- Tomatillos
- Yellow onion
- Jalapeno (can substitute a milder pepper if desired)
- Fresh lime
- Fresh garlic
- Cilantro
- Salt
Best Salsa Making Tips:
Alright, I began with making sure my oven was fully preheated. This is crucial, because you will be taking the ingredients off of the grill pan and putting them straight into the oven. You don’t want to put hot charred ingredients into a cold oven – that would ruin the momentum of cooking and take longer!
So, preheat to 375!
Wash and prep all of your vegetables and get them ready. I kept the tomatillos whole, but I diced the onion into four large chunks as well as removed the top of the jalapeno. I also kept the garlic cloves whole after I removed the skins.
Side note: you can use a milder pepper like serrano or green bell pepper in place of the jalapeno if desired. The jalapeno, since it’s NOT deseeded is quite spicy so be warned!
Next, I used my grill pan which I love! Get it hot on your stovetop and add a dash of avocado oil.
Once it’s hot – you want to keep it on medium high heat. Add all of the veggies onto the pan and let them cook for about 5-8 minutes on the grill pan, flipping occasionally.
Once that is done, it’s pretty simple. Add all of the ingredients onto a sheet pan and into the hot oven! Let it roast as you prep another part of your meal, maybe fold that laundry you’ve been avoiding or watch your favorite show! You do you 😉
I let mine roast for 15-20 minutes. You want to make sure the tomatillos are soft and caramelized to the touch. Note: this might take longer if you are using larger tomatillos than I was.
Once they are fully roasted, carefully add them to a heat safe blender or food processor.
Now you add in that fresh garlic, cilantro, lime and salt. You can absolutely roast the garlic if you’d like, I just prefer the kick and bite of fresh garlic.
And now blend it up! It will go from looking like this to THIS:
Hello blended beautiful fresh salsa! YUM! Be sure to taste and then adjust for seasoning – if you need more salt, add more! More lime? Add it in! Adjust it to your liking 🙂

This Grilled Tomatillo Salsa Verde is LOADED with flavor! Grilled perfectly to get a good char on the veggies followed by roasting and blending, this salsa is simple to whip up and a crowd pleaser!
Ingredients
- 1 medium Yellow onion
- 1 and 1/2 lbs tomatillos
- 1 medium jalapeno
- 3 large cloves garlic
- 1/2 cup diced cilantro
- 1 tsp avocado oil
- juice of 1 lime
- 1/2 tsp of salt (or more if desired)
- tortilla chips to eat with
Instructions

Preheat oven to 375.

Prep and wash your ingredients. Dice the yellow onion into large chunks. Remove the top of the jalapeno. Keep the garlic cloves whole as well as the tomatillos. Dice the cilantro.

To a grill pan, get it hot and add the avocado oil. Add the onion chunks, tomatillos, and jalapeño and char them for a 5-7 minutes, flipping occasionally.

Next, add those ingredients to the sheet pan and place them in the preheated oven. Roast for 15-20 minutes or until cooked through and tomatoes are soft.

Add those ingredients to a heat safe high powered blender along with the cilantro, lime, garlic and salt. Blend until combined. Taste and adjust for salt. Eat with lots of chips and enjoy!
