This Fizzy Watermelon Paloma is my new go-to beverage! It’s so refreshing and feels like Summer in a glass!
Alright you guys – it’s time for another cocktail recipe! If you’re like me right now – you’re wanting all of the fresh foods! Like, can I please just not turn on my oven to cook right now and eat everything grilled and fresh?!
That’s why I’m specifically loving this Watermelon Paloma!
What is a Paloma?
A classic paloma is a cocktail you can find in most bars that consist of a few specific things:
Tequila
Grapefruit juice
Seltzer (or club soda)
Salt
Combined, it’s tart, delicious and yummy!
However, I wanted to make mine a little bit sweeter and more Summery, hence why I used watermelon instead of grapefruit!
Why you’ll love this drink:
I specifically love this drink because it’s SO refreshing. Seriously, it tastes like you’re biting into an ice cold watermelon in the middle of Summer. I love the fresh watermelon in it as well as the tartness of the lime that helps balance out the sweetness.
The tequila adds a nice zip to it and of course, the fizziness comes from the seltzer! You can also use club soda – but I enjoy using lime seltzer to even further the flavor of the drink!
And of course, I had to garnish it with something beautiful so I chose mint! You can absolutely garnish it with a watermelon wedge, mint or whatever else you might want too!
I also think it could be fun if you salted the rim of the glass – or even added sugar if you like your cocktails extra sweet!
Overall, it’s fizzy, sweet, oh so thirst quenching and DELICIOUS! So let’s get into what you need to make it!
Ingredients You Need:
- Fresh watermelon chunks
- Tequila
- Lime
- Seltzer
- Simple syrup
- Mint to garnish (optional)
How to Make Watermelon Paloma:
Grab the watermelon chunks – I did about 2 cups of watermelon chunks. For simplicity, I just bought a watermelon half that had already been cut at the grocery store.
Add them to a blender. Blend it up and then strain it! It should look something like this:
How beautiful is that color?!?!? Set that aside for now.
Take your favorite cocktail glass and if desired, coat the rim with lime juice and then dip in salt. I like this because it adds some salty sweet goodness to the drink. You could always add sugar on the rim if you’d like instead!
Next, add some crushed ice. Next, add in the watermelon juice (I did about ½ cup for 1 glass). If you have leftovers, no worries! Use it for another drink!
Top with the tequila and add a splash of simple syrup to taste – make it as sweet or not sweet as you’d like. Add the juice of ½ of a lime in there. Mix together using a cocktail spoon.
Finally, top with fizzy lime seltzer! Garnish with mint and enjoy!
Mocktail Version:
If you want this to be a mocktail it’s super easy – just add a little bit more watermelon juice to the beverage and then add extra seltzer on top! Voila!
I hope you all love this drink as much as I do! XO – Haylie

Recipe Notes
To make homemade simple syrup, add 1 cup of water and 1 cup of sugar to a pot on the stove on medium heat - stir and cook until the sugar dissolves into the water - it shouldn't take long at all!
