Sharing a round-up of a few of my favorite healthier recipes to make in the New Year!

Hi friends! Happy 2022! Can you even believe it’s officially January?! This past year went by so quickly. 

Usually in January, I am ready to get organized, eat healthier and get my life back in order after the chaos and craziness of the holidays. And while I am still feeling that way slightly, I am having to take a step back because hi, hello, I’m 33 weeks pregnant. 

There is also just so much pressure to immediately get your life together. To buy a new planner, to learn how to cook 15 new *healthy* recipes or to start a 7 day a week workout routine…and I’m just not here for that. 

This year, I really want to focus on eating nutrient dense, REAL GOOD food. Not to lose weight, not to detox but to make my own body feel GOOD!

I want to go on more walks to get fresh air and soak up the sun – not to burn calories. I want to organize my life in a way that’s easy and practical for me. How does that sound?! Who is with me!?

I’m rounding up a few of my favorite go-to recipes that I think would be awesome to make this month – from breakfast, main meals and dessert/snack options. 

So let’s get into it! 

Breakfast:

Pesto Sweet Potato Hash with a Crispy Egg – the perfect breakfast for your savory breakfast loving hearts! Crispy sweet potatoes doused in pesto, veggies and of course, a runny fried egg on top. Carbs, veggies, protein. YUM.

Blueberries and Cream Oatmeal – I don’t know why but there is something about Winter that makes me want all of the warm and cozy breakfasts, including this oatmeal! It’s loaded with fresh antioxidant filled blueberries and cream – a lightened up version of the oatmeal packet that you loved as a kid!

Vegan Orange Spice Muffins – We can’t start January without baking! And I love these muffins *so* much. Citrus is fully in season now – so what better way to celebrate than whipping up a batch of these extra moist, orange spiced muffins!

Vanilla Almond Granola – Since I am so pregnant, I’m constantly snacking and I absolutely love having a batch of this granola to nibble on throughout the day! It is pure deliciousness by the handful! Also I love adding some milk + bananas for a quick breakfast.

Fluffy Zucchini Pancakes – weekend brunch time! I absolutely love these fluffy zucchini pancakes. Because what better way to eat your vegetables than by throwing them in a stack of hot, fluffy dreamy pancakes?! Exactly. Extra butter on top for me please!

Main Meals (Lunch/Dinner):

Loaded Mediterranean Ground Lamb Bowls – If you’re looking to try out a new protein this year, I love these ground lamb bowls! They are loaded with flavor and best eaten with warm pita bread!

Caprese Chicken Orzo Bowls – Made with my all time favorite pasta (orzo!) This bowl is so fresh, flavorful and I absolutely love the juicy tomatoes in each bite!

Sheet Pan Shrimp Fajitas – Yesssss to sheet pan meals! Specifically, these delightful shrimp fajitas! Made all on one pan, easy to whip up and perfect loaded into a corn tortilla with all the toppings!

Southwest BBQ Chicken Salad with Zesty Ranch – This salad is not your average salad! Loaded with loads of veggies, saucy BBQ chicken and of course, ranch dressing, it’s crunchy and unique and delicious!

Chicken Pesto Quinoa Bowl – Made with simple ingredients, this bowl is flavorful and keeps you full for hours! I could eat the pesto chicken straight from the pan itself!

Soups:

Lightened Up Broccoli Cheddar Soup – Hello cheesy, creamy deliciousness! This soup is made with a few healthier swaps to lighten it up but doesn’t skimp on the classic taste you know and love.

Roasted Garlic Tomato Soup – This recipe has easily become one of my personally most made from the blog. So quick to whip up, so delicious…must eat with a buttery grilled cheese!

Creamy White Lasagna Soup – Ahhhh, creamy, delicious, lasagna noodles, veggies. Cozy, piping hot bowl of goodness! Highly recommend this one!

Potato Carrot and Leek Soup – Always a hit on my blog during this Winter, I based this soup off of a meal I got in a pub in Oxford. It’s creamy, so delicious and perfect for all veggie lovers!

Creamy Chicken Sausage and Gnocchi Soup – Oooh I just love this one! It’s the perfect balance of creamy and savory and each bite has a soft potato gnocchi that melts in your mouth. Yum!

Desserts/Snacks: 

Chocolate Orange Energy Bites – I love these so much! They are loaded with rich cocoa flavor as well as fresh orange zest. The perfect poppable little treat for a mid-day pick me up!

Coconut Hot Chocolate – Because it can’t be Winter without hot chocolate, right?! Right! I love this recipe because it uses full fat coconut milk which is SO flavorful and delicious. You can control how much sugar you put in it as well!

Chocolate Peanut Butter Granola Bars – Skip the ones you can buy at the store and whip up your own! I love these because they are loaded with wholesome ingredients but you can’t miss out on the drizzled chocolate at the end. YUM!

Mocha Almond Smoothie Bowl – Oooooh, this is the perfect morning pick me up because it combines both chocolate and coffee. A win win, this bowl is delightfully creamy and delicious!

Peanut Butter and Jelly Energy Bites – your favorite childhood snack reimagined into a delicious bite size morsel! The pockets of jelly in these always make me so happy.

And that’s it! Of course, this is just a starting point – my blog is filled with other recipes that would be perfect to make this month or the coming months 🙂
