Sharing my favorite cozy January recipes to whip up at the start of the new year!
Happy 2024, you guys! I can’t believe I’m writing that. I hope you all had an incredible holiday season and are enjoying the New Year so far.
Resolutions + My Thoughts:
Ahhhh, a new year. A fresh start. New goals. Or a time to just relax, ease in and be gentle with yourself.
However you are feeling in the start of 2024, just know that here at OBB – we are good with BOTH of those things.
This year marks the 10TH anniversary of me setting a goal to lose weight. At the beginning of 2014, I decided to just go for it for real. I didn’t have a gym membership, I had no idea what I was doing….and yet, a year and a few months later, I was down 80 pounds.
So I think goals are absolutely AMAZING and me setting and sticking to my goal in 2014 changed the trajectory of my life.
However, being gentle on yourself is also good. We are all about a BALANCED life here at OBB which means no restrictions but of course, room for being thoughtful about what we consume both food wise and otherwise.
That can include the shows you watch, books you read, people you follow on social media…it’s always smart to be thoughtful of those things.
So….anyways, I think you guys get my point!
I wanted to start the year off by sharing a few of my favorite recipes that are perfect for this month whether you are trying to eat a little healthier or just cozying up for a long winter season. So let’s get into it!
Ah, breakfast. I go to bed looking forward to coffee and breakfast. Anyone else? Here are a few of my favorites.
Maple Cinnamon Banana Muffins: both a toddler and adult favorite! These are refined sugar free yet SO tasty.
Roasted Blueberry Toast with Whipped Ricotta: love this one with fresh sourdough! You can use frozen berries to be sure they’re in season.
Everything Bagel Breakfast Sandwich: for all of my savory breakfast recipe lovers! The fried egg is a must.
Chocolate Orange Smoothie: The ultimate flavor combination! So creamy and delicious.
Lunch is a meal that always stumps me! Here are a few make ahead options that you might enjoy.
Chimichurri Chicken Burgers: these would be perfect to meal prep at the beginning of the week! If you want to skip the buns, add to a salad or a bowl of rice!
Caprese Pasta Salad: oooooh yes please! Such great flavors here and so filling!
Buffalo Chicken Flatbread Pizzas: the easiest lunch recipe to whip up during the week, toppings are whatever you might have in the fridge!
Smashed Chickpea Salad: absolutely love this SUPER easy recipe – so much flavor and you can eat it just in a bowl with crackers or on toasted bread.
My dinners in January revolve around easy + cozy meals. Here are a few of my favorites!
Turkey Taco Quinoa Skillet: a one skillet cheesy dream! You have your veggies, protein and grain all in one here.
Roasted Red Pepper and Tomato Soup: I love this one so much. It uses canned tomatoes and roasted red peppers….simple and delicious. Don’t forget the grilled cheese on the side!
Lemon Ginger Chicken Noodle Soup: a must for these winter months as the cold season is back upon us. So much nutrition here!
Mediterranean Salmon Bowls: the crispy salmon is EVERYTHING. Love all the fresh veggies too!
Creamy Black Bean Soup: if you’re looking for a vegetarian option, this is DELICIOUS. I love how creamy it is and how you can top it off with veggies!
I always need something sweet at the end of the night. Here are a few you might enjoy!
Espresso Chocolate Chip Blondies: if you are looking for the ultimate sweet treat that combines both chocolate and caffeine, this one is for YOU!
Simple Lemon Loaf Cake: citrus season is in full swing, highly recommend this simple and delicious lemon cake.
Spiced Chai Hot Chocolate: because you can’t go for the rest of winter without a dreamy creamy cup of hot cocoa!
Chocolate Orange Energy Bites: my favorite sweet treat energy bites to snack on! Love the flavor combo SO much.
