To be honest, bagels have always been sort of a “trigger” food for me. Any super high carb food such as bagels or pasta has always given me the bad butterflies in my tummy.
Making my mind question – will I gain 20 pounds from eating this bagel? Or this big plate of Cajun Chicken Alfredo?
And the rational answer is: no. But, as you can probably ask anyone who has suffered through an eating disorder, sometimes our thoughts aren’t always so rational. If you’d like to read more on my journey, you can click here.
Anyway, this year, one of my goals was to branch out to try foods that I don’t often eat.
That includes spices, sauces, non-dairy milks etc. This also includes foods that may have scared me into those fears in the past like bagels, pasta etc. So, here we are. And let me tell you how FREEING it was to eat this delicious bagel with NO fear and no regrets!
Yay for getting out of comfort zones and making progress!

So, this Everything Bagel Breakfast Sandwich is loaded with all of your favorite breakfast ingredients.
You’ve got the cream cheese (which I added tons of scallions to for extra flavor), slices of fresh avocado for another creamy element, your choice of greens for a hint of crunch (and nutrients of course), red onions for spice and crunch and…
To top it all off – the most delicious steamy buttery fried egg you could ever dream of!
When you load all of that onto an already amazingly flavored Everything Bagel – you know you’re about to have a good day! The combinations are straight up fire, y’all.
I love how customizable this sandwich is. You don’t have avocado? No worries! Skip it.
Or maybe you don’t have cream cheese but instead have sliced cheese that you want to toast and get all melty or delicious.
No red onion? Skip them and maybe add sautéed mushrooms! Want a bit of juicy acidity on there? Add some tomato! The world is your bagel, my friend.
Aaaand even though I’m not exactly reinventing the wheel here, I’ll tell you exactly how I made mine!
Ingredients You Need:
- 1 everything bagel (preferably toasted)
- plain cream cheese
- green onions/scallions
- red onion
- avocado
- spinach
- egg
- salt/pepper/any other spice you might want to add (i like red pepper flakes and garlic powder)
Best Bagel Making Tips:
First, if you’d like – toast that delicious bagel. This will ensure a perfect crunch to chew ratio.
While it’s toasting, slice up the scallions and add them to softened cream cheese. Mix until combined. Add salt and pepper and garlic powder if desired for extra flavor.
Slice up half of an avocado, as well as a fourth of a red onion. Set these aside.
In a non-stick pan, add salted butter.
Once melted over medium heat, crack an egg in the butter, sprinkle some salt and pepper on top and let cook for about 2-ISH minutes, until the whites are completely cooked through.
Keep in mind – this all depends on how you like your eggs cooked! I prefer my whites fully cooked but the yolk still runny. Feel free to scramble, poach or do whatever!
Now, your bagel should be toasted. Schmear the scallion cream cheese on BOTH sides of the bagel. Add a large handful of spinach on one side. Add the egg on top of the spinach.
On the other side, place your avocado slices as well as the red onion. Add an additional crack of pepper and pinch of salt on each side. Put them together, make a sandwich and ENJOY!
This recipe is extremely adaptable to whatever veggies you might have in your fridge!
The main stipulation is that you must have the toasted everything bagel and cream cheese.
Everything else is totally up to you – this is just my personal favorite combination. Just like pepperoni, banana peppers and feta cheese are my personal favorite pizza toppings. Now I’m craving pizza at 8 AM….no big deal.

Everything Bagel Breakfast Sandwich
This Everything Bagel Breakfast Sandwich are loaded with scallion cream cheese, fresh avocado, your favorite greens and of course - a buttery fried egg! Delicious, satisfying and SO easy!
Ingredients
- 1 toasted everything bagel
- 2-4 oz softened, full fat cream cheese
- 1-2 small stalks of scallions
- a handful of spinach
- 1/4 of a small red onion, diced
- 1/2 avocado, sliced
- 1 fried egg
- 1/2 tbsp salted butter
- 1 tsp garlic powder
- salt and pepper to taste
Instructions

Toast the everything bagel. While it's toasting, dice the scallions and mix them into the softened cream cheese. For added flavor, add 1 tsp garlic powder and salt and pepper to taste. Mix well to combine. Slice the avocado and dice the red onions. Set aside.

In a non-stick pan, melt 1/2 tbsp of butter on medium heat. Crack one egg into it and sprinkle with salt and pepper to taste. Cook for 2-ish minutes, or until desired result. I prefer the egg whites fully cooked and the yolk runny.

Now that the bagel is toasted, schmear both sides with your cream cheese. Add a handful of spinach on the bottom half, as well as the fried egg. On the other half of the bagel, add the avocado and the red onion. Add salt and pepper to taste if desired. Enjoy while hot!
Bagel sandwiches always remind me of weekend brunching. When my hubby and I first started dating we would go to this bagel breakfast place on Saturdays and order bagel sandwiches and crispy hash browns. It was so good. Bagels aren’t something I eat very often, but really enjoy them especially an everything bagel and especially if you piled it high with delicious toppings like a perfectly cooked egg and avocado.
