Easy Pineapple Black Bean Salsa

This Pineapple Black Bean Salsa is so easy and delicious! It’s perfect for eating with lots of tortilla chips, a taco topping or topping a grilled meat!

You guys. This is the easiest salsa recipe I have ever created or devoured in my life. It’s so easy, in fact, that no food processor or blender is required. Got a big ol’ spoon? Got a big ol’ bowl? Got a good chopping knife? Then you’re all set! Wow, I feel like I really let my Southern voice come out in that moment. My mama would be proud.

Okay so. Y’all know I have been loving allll of the Summer fruit lately. If you’re interested in checking those out, I made a Strawberry Coconut Crisp, and a Peach BBQ Chicken Pizza. However, in between all of the delicious recipes, I’ve been snacking on one fruit in particular: pineapple! Yes, the juiciest, sweetest most delicious yellow fruit to ever be.

I actually used to hate pineapple. Growing up, I only ever ate it out of the fruit cups with the syrup-y juice. You know which ones I’m talking about right? Those are SO gross! It wasn’t until a few years ago that my sister in law introduced me to fresh pineapple. In fact, that day, she cut up a whole pineapple and between me and her, we ate the entire thing. Pretty sure our mouths were burning/bleeding by the time we were done. #worthit

So, I love juicy fruit. I also love anything that has to deal with Southwestern/Mexican food. Take for instance my Turkey Taco Quinoa Skillet, or my absolute favorite Easy Homemade Salsa that Benjamin and I make at least twice a week! So I thought, why not combine these two loves?! That’s how this Pineapple Black Bean Salsa was born. Yes, it was glorious.

What You’ll Need:

  • pineapple (i really recommend you use freshly cut pineapple!)
  • black beans
  • jalapeno
  • lime
  • cilantro
  • salt

Yup, that’s it. 6 ingredients.

How do I make it?

This may be the easiest recipe I have ever posted here on Our Balanced Bowl. It’s pretty simple! All you need to do is finely dice the pineapple. Next, deseed and dice the jalapeno. Take your can of black beans (I prefer the organic brand from Aldi!) and drain and rinse them. Add everything to a bowl.

Garnish with lime, lots of salt and cilantro.

Mix all together.

AND YOU’RE DONE. I swear, the entire process takes less than 5 minutes.

That’s really it?

Yup! That’s it. You are more than welcome to let the salsa cool down in the fridge. This may help the flavors meld together. However, if you’re in a rush or you’re making dinner – just eat it right then and there!

What does this pair well with?

My personal favorite way is to eat it with tortilla chips. I love the blue corn dippers! However, I know it would be amazing on grilled salmon or chicken! It would also be awesome just as a topping on your tacos! To be honest, you can eat this by the spoonful and it will still be good.

Ingredients

  • 1/2 cup freshly diced pineapple
  • 1 can black beans
  • 1 jalapeno, diced and deseeded
  • juice of one lime
  • handful of chopped cilantro for garnish
  • salt to taste (about 1 tsp)

Instructions

  1. Rinse and drain your black beans. Add them to a medium bowl. Finely dice your fresh pineapple and add it to the bowl. Deseed and dice your jalapeno and add it to the bowl. Garnish with the juice of one lime, a handful of chopped cilantro and about 1 tsp of salt to taste. Mix all together. Enjoy with tortilla chips, as a topping on tacos or as a topping on grilled meats!
