Easter Egg Blondies

These Easter Egg Blondies are the perfect Easter treat! Loaded with the best Easter candy, there are dense, fudgy and truly just the most delicious dessert!

Happy almost Easter, y’all! I love Easter so much. There is something that makes me so happy about this holiday. 

If you celebrate it, you know that there is really no gift giving or holiday shopping stress, it generally just seems like a fun holiday to spend with family celebrating the resurrection of Jesus! Yay! 

I knew I wanted to up my dessert game this year…and while I will always stand by my Easy Homemade Banana Pudding as my go-to dessert for Easter, these are my new favorite. 

Why These Blondies are the BEST: 

First off, if you aren’t sure what a blondie is – it’s similar to a brownie. It has the same fudgy, dense texture that classic brownies have – just minus the chocolate + cocoa powder.

So, if you’re a fan of chewy bars these are for YOU! 

Another reason these are most likely for you?! Because they are loaded with the SUPERIOR Easter candy aka Mini Cadbury Eggs! 

I had actually never had this candy up until a couple of years ago when Ben introduced me to them. I think we actually bought them after Easter on sale and wowza was I hooked. 

I love the candy shell on the outside but the smooth chocolatey inside. They aren’t overly sweet but they’re still able to satiate your sweet tooth. It’s the best of both worlds. 

So these Blondies are loaded with this candy – they’re just delicious. Chewy, soft, moist, all the good things in life. 

And did I mention they’re SO easy??! Seriously – ONE BOWL baking. They are just incredibly simple to whip up! 

Perfect with an ice cold glass of milk for dessert or a snack anytime 😉 So let’s get into how to make them! 

Ingredients You Need: 

  • Salted Butter 
  • Light brown sugar 
  • All purpose flour 
  • Egg 
  • Vanilla extract 
  • Salt 
  • Mini Cadbury Eggs 

Best Blondie Baking Tips: 

Begin, as always, by preheating the oven and of course preparing your baking pan. For this recipe, I used my 8×8 glass baking pan. I lined mine with parchment paper to make sure that they didn’t stick for SURE. 

Next, melt the salted butter in a large bowl. Once it’s melted and it’s liquid gold, add in the sugar and whisk it until they’re combined. Resist the urge to take a bite and continue, lol. 

Next, add in the egg, vanilla extract + salt. Whisk together until fully combined. 

Last but certainly not least, add in the all purpose flour and stir it in with a wooden spoon. Don’t overmix this! Stir just until the flour is combined. 

And of course…you now must add in the candy! 

For this, I added the mini cadbury eggs into a ziploc bag and just gently began to crush them into pieces. I tried to chop them with a knife and it didn’t work ha! So this was definitely the best solution. 

Add the candy into the blondie batter and gently fold in. 

Add the batter into the lined baking pan and you’re ready to bake them up! 

Bake for about 25-30 minutes or until a toothpick comes out mostly clean from the center. Let them cool and then slice!

If desired and if you want to make them extra pretty, melt some white chocolate and drizzle that on top and then top them with extra eggs! 

Store at room temperature in a tightly sealed container for 2-3 days although of course, with any baked good, they are best eaten the DAY of! 🙂

Ingredients

  • 1 stick (8 tbsp) salted butter, melted 
  • 1 cup light brown sugar 
  • 1 and 1/4 cup all purpose flour 
  • 1 egg, room temperature 
  • 2 tsp vanilla extract 
  • 1/4 tsp salt 
  • 1 cup roughly crushed mini Cadbury eggs 
  • melted white chocolate for drizzle (optional)

Instructions

  1. Preheat oven to 350. Line an 8x8 glass baking pan with either baking spray or parchment paper. Set aside.

  2. Melt butter in a large bowl. Add in brown sugar and whisk to combine. Next, add in egg, vanilla extract and pinch of salt and whisk together until fully combined.

  3. Next, add in the flour and stir in with a wooden spoon.

  4. Add the mini cadbury eggs to a ziploc bag. Use a kitchen tool to gently crush them into small to medium size pieces.

  5. Gently fold them the candy into the batter until just combined! 

  6. Add to the greased pan and spread the batter evenly. Cook for 25-30 minutes or until toothpick can be inserted and comes out mostly clean. 

  7. Let cool for 10-15 minutes and then slice. If desired, drizzle with white chocolate and garnish with more mini eggs!

  8. Store in a tightly sealed container at room temperature for 2-3 days. Although these are best eaten the day of baking. Enjoy! 🙂
