Cranberry Brie Puff Pastry Bites

These Cranberry Brie Puff Pastry Bites are the best one bite holiday appetizer! Loaded with chunks of melty brie, homemade orange cranberry sauce all tucked into a golden brown puff pastry bite! So easy and SO delicious!

Happy almost Thanksgiving, y’all! Can you even believe it’s almost here? I feel like this year has went by so simultaneously fast but also slow at the same time. But, I have to make a confession: I put up my Christmas decor last night. I just couldn’t wait anymore and I have NO REGRETS. 

Anyway…I wanted to quickly come on here to share one more recipe before the big day! 

These Cranberry Brie Puff Pastry Bites are the absolute PERFECT appetizer. I mean, my goodness, the day I made these – my husband and I ate almost all of them. They’re SO good. 

Why These Bites are the BEST: 

First off, they require little to no effort. Seriously, no homemade puff pastry. Store-bought, check!

They contain a lot of melty cheese, check! 

I did use my homemade cranberry sauce BUT you can always buy store-bought to make your lives easier, CHECK! If you haven’t tried my homemade though – highly recommend you do! It’s so simple and has so much flavor! 

Put it all together and voila – you’ve got a flaky, buttery and perfectly golden little pastry bite.

Inside, your wildest dreams come true with a combination of the meltiest, gooiest brie cheese combined with tart orange cranberry sauce. 

Garnish with a sprig of fresh herbs or maybe some orange zest and I swear it will look like you just spent hours in the kitchen like you were a contestant on the Great British Baking Show when in fact, you were finishing watching an episode of your favorite show while these little guys baked in the oven.

YUP. I’d call that a holiday win! So without further adieu, let’s get into how to make these! 

Ingredients You Need: 

  • Store-bought puff pastry (I highly recommend Wewalka! Not sponsored, but y’all know I love them soo much and you don’t have to thaw it because it’s only refrigerated!) 
  • Brie cheese 
  • Cranberry sauce 
  • Fresh herbs/orange zest to garnish if desired

Best Baking Tips: 

Y’all know I’m a huge fan of butter. And greasing my baking pans with butter. However, I would highly recommend just using non-stick cooking spray for this recipe! It will make your life SO much easier and make sure the puff pastry doesn’t stick AT ALL! 

Use a pizza cutter to slice your puff pastry into bite size pieces! I started by slicing the entire puff pastry into 4 long parts. From there, slice small squares that are about 2.5×2.5 inches. I had about 20 cut squares when I was finished slicing! 

Next, I would recommend buying a circular wheel of brie cheese – I bought an 8 oz wheel and then dicing HALF of it up into bite size pieces. Make sure they fit directly into the little puff pastry pocket – it should look something like this!

You can use the other half for another recipe…perhaps a smaller Baked Brie with Apricot Preserves? 

Lastly, put 1-2 tsp of homemade cranberry sauce on TOP of the brie. 

Pop them into the oven and let them bake away!

When they’re done, they should be perfectly flaky and golden. The cheese should be bubbly and the sauce should be warmed through! 

Let them cool for a few minutes and then serve them on a fancy tray with garnishes! I loved garnishing mine with fresh rosemary for a pop of color and of course, homemade orange zest. 

Or, if you’re just chilling at home for the holidays, bring the cooled down pan into the living room, pop on your favorite Christmas movie and eat them straight from the pan. I’m cool with either, to be honest!

However you eat these, I do hope you truly enjoy them. Enjoy the ooooey gooey cheese, the tart cranberry sauce and the buttery puff pastry! Enjoy every single bite!

Cranberry Brie Puff Pastry Bites

Ingredients

  • 1 (13.2 oz) package puff pastry, thawed 
  • 4 oz (half of one wheel) of brie cheese, diced into bite size cubes that fit into the puff pastry in the muffin liners
  • 1/2 cup cranberry sauce 
  • fresh rosemary or orange zest to garnish

Instructions

  1. Preheat the oven to 400 degrees.

  2. Unroll your puff pastry and place either on a clean surface or parchment paper. Using a pizza cutter, slice your puff pastry into 4 long parts. From there, slice small squares that are about 2.5x2.5 inches - you'll have about 20 squares.

  3. Use cooking spray to spray your mini muffin pan. Gently place the puff pastry into a hole and push it down to frame it. 

  4. Slice the brie into bite size pieces, 20 pieces. Place in the puff pastry. Top with 1 tsp or so of cranberry sauce.

  5. Place in the oven to bake for 12-15 minutes or until golden brown. 

  6. Let cool in the pan for 5 minutes or so and then remove while the brie is still warm and melty. 

  7. Garnish with fresh rosemary or orange zest if desired.

Recipe Notes

This recipe makes about 20 bites - so if each person got 2 bites, that would make this recipe serve around 10 people 🙂
