For the very last recipe before the big day (Christmas!!), I wanted to keep it extra simple. A recipe that can be made in one pot in less than 5 minutes. A recipe that warms you to your toes. That’s exactly what this Coconut Hot Chocolate is!
Hot chocolate is one of my all time favorite beverages in the winter season. I love how warm, comforting and cozy it is. I also love that if I’m drinking hot chocolate, that means I’m most likely nestled under a fuzzy blanket watching one of my favorite shows on a weekend. Comfort food (or drink) at its finest!
Ingredients to Make Coconut Hot Chocolate:
- full fat coconut milk
- unsweetened cocoa powder
- vanilla extract
- sugar of choice
- marshmallows to top
How to Make Coconut Hot Chocolate:
I probably don’t need to walk you through how to make this. But just in case, here I am!
So let’s begin! This hot chocolate is made with full fat coconut milk. I love Trader Joe’s brand. It’s inexpensive and has a great flavor. I think you have to use full fat coconut milk in order to get that really intense richness to come through.
If you want to have an additional coconut flavor, I recommend you use coconut sugar. However, you can also use just plain white granulated sugar. Want it refined sugar free? Substitute maple syrup or honey! Also, the only “chocolate” in this is the unsweetened cocoa powder. If you want it extra sweet, melt some semi-sweet chocolate chips into the mixture.
So, first, you’re going to want to place a small pot on your stove eye. Add in the full can of full fat coconut milk. It may separate (as in, there may be a layer of coconut cream with coconut milk on the bottom. If that’s the case, use a whisk to stir for 1-2 minutes until it all combines together into a creamy milk.
Directly to the same pot, add in your cocoa powder, vanilla extract and sugar. Simply whisk everything together until combined and creamy.
It’s pretty simple from there. Whisk occasionally until it’s fully warmed. Pour into your favorite mug (mine is this one – from Target!) and enjoy!
I topped mine with a ton of mini-marshmallows and a pinch of salt. Mini marshmallows are something I must have with hot chocolate. Whipped cream isn’t my favorite because it always melts into the drink. The marshmallows stay whole and sweet and delicious.

Coconut Hot Chocolate
This Creamy Coconut Hot Chocolate is thick, rich and so creamy! It has a striking cocoa flavor and is only slightly sweet. Don’t forget the mini marshmallows!
Ingredients
- 1 13.5 oz. can of full fat coconut milk
- 1-2 tbsp unsweetened cocoa powder (depending on how how cocoa-y you want it)
- 2-3 tbsp white granulated sugar (or coconut sugar)
- 1 tsp vanilla extract
- mini marshmallows (for garnish)
Instructions

In a medium pot on medium heat, add your can of coconut milk. If it seperated in the can, whisk until it's all combined (about 1-2 minutes). Add in your unsweetened cocoa powder, vanilla extract and sugar. Mix together until combined and creamy.

Let warm on the stove, stirring occasionally, for around 5 minutes. Once warmed, pour into your favorite mug. Top with lots of mini marshmallows if desired!
