Cinnamon Roll Overnight Oats

Cinnamon Roll Overnight Oats in white bowl with golden spoon

These Cinnamon Roll Overnight Oats are vegan, filled with cinnamon roll flavor, have a easy icing glaze and are the easiest breakfast to meal prep!

Y’all know that I already am obsessed with overnight oats right? I mean, it’s been a “trend” for many years now – but my very first blog post on OBB was an overnight oats recipe! These Creamy Blueberry Overnight Oats (please forgive the horrible photography) still remains one of my favorite oatmeal recipes. However, I have a couple that rival it – depending on the season! I love the Banana Bread Overnight Oats in the winter, the Peaches and Cream Oatmeal in the Summer and the Chai Spiced Apple Oatmeal in the Fall. Yeah, maybe I have an oatmeal obsession…

There are worse things to be obsessed over right?!

However – these Cinnamon Roll Overnight Oats definitely top the list right now! OH EM GEE. They’re so stinkin’ good! I know that some people really won’t believe these taste like a cinnamon roll but y’all they really do!

They have cinnamon swirled throughout the oats, brown sugar (yes, refined sugar – gasp!) and if you wanna get even more extra – you can put a quick cinnamon roll icing on top!

The icing may not be for everyday use – especially considering it’s just powdered sugar and water but BOY it sure does amp up the cinnamon roll flavor! So maybe treat yourself every once in a while with it.

Ingredients you need for Cinnamon Roll Overnight Oats:

  • quick or old fashioned oats (skip steel cut!)
  • non-dairy milk (I used unsweetened vanilla almond)
  • cinnamon (duhhhh!!)
  • brown sugar (double duhhh!!)
  • vanilla extract (for that extra goodness)
  • powdered sugar + water for glaze (optional)

Making Cinnamon Roll Overnight Oats:

Grab a mason jar (or something similar) and add in your oats. From there, add in your cinnamon and brown sugar. Stir thoroughly to mix – this is how you’ll achieve that cinnamon roll flavor in each bite!

Next, add in your milk. Mix together until combined. Put the lid on it and shake it up to combine. Place in your fridge to set overnight. The oats soak up a lot of that delicious cinnamon brown sugar milk goodness and get SO unbelievably creamy and delicious.

I would recommend making the glaze the morning of when you eat the oats – I wouldn’t mix it into the jar as it will be extra sweet. The glaze consists of adding powdered sugar + water (or milk!) together and mixing until thick and silky smooth.

Not into Overnight Oats? No worries! Try these options!

Stovetop Method:

In a pot, bring your milk to a boil. Add in your oats that you’ve mixed with cinnamon and brown sugar. Turn down the heat and cook on medium for 1-2 minutes or until consistency is how you want it (thick or thin).

Microwave method:

In more of a hurry? Mix your oats, brown sugar and cinnamon in a bowl. Add in your milk and stir to combine. Place in microwave for 1 minute, 1:30 if you want it thicker. Enjoy!

I hope you guys enjoy these Cinnamon Roll Overnight Oats! Don’t forget you can meal prep them for your week! Just make 5 mason jars full and place ’em in the fridge. They should keep just fine!

Letting all of the flavors meld together overnight really just puts the flavor over the top! Not to mention, it makes these oats SO super creamy. YUM!
