Chorizo Tacos with Cilantro Lime Crema

These Chorizo Tacos are SO simple and delicious. Spicy chorizo loaded into a warm corn tortilla topped with a tangy cilantro lime crema! These are seriously taco perfection!

I’m so so excited to be sharing this recipe with you guys today! You guys know that Mexican food is my favorite cuisine and I have shared many taco recipes on the blog over the years. 

But I don’t really ever share tacos with chorizo – which is my all time favorite meat to eat on tacos!! Why have I been holding out?! Not any longer! 

What is Chorizo? 

Not sure what chorizo is? Several years ago, I wasn’t either! Chorizo is ground pork that is normally used in Mexican or Spanish cuisine. It’s seasoned with a ton of spices that makes it deliciously spicy without any effort from you!

I prefer to get chorizo fresh from the butcher at my local grocery store – the fresher the better! 

Why These Tacos are the BEST

First you have that delicious chorizo – it’s so spicy, full of flavor and fat and is just seriously the best, most authentic way you can eat a taco! 

I love the warm charred corn tortillas that you fill to the brim with the spicy meat and all of the toppings!

One of my favorite things about these tacos is the balance!! Yes, the chorizo is deliciously spicy. But, say hi and hello to my favorite new sauce: Chipotle Lime Crema. 

It’s an insanely simple, blitz in a food processor sauce that is the perfect accompaniment to the spice of these tacos! 

It’s fresh, it’s light, it’s creamy and it’s tangy!

Put the two together and you have the perfect balanced taco. Garnish with your favorite toppings and you’ve achieved taco level 10! So let’s get into exactly what you need for this delicious dinner 

Ingredients You Need 

  • Fresh made chorizo 
  • Corn tortillas 
  • Sour cream 
  • Cilantro 
  • Garlic powder, salt 
  • Fresh lime 
  • Favorite taco toppings

Favorite Taco Garnishes 

In Mexico, the classic taco toppings are finely chopped onions and cilantro.

In my house, I love having chopped onions, cilantro but many more toppings lol!

My favorites are homemade salsa, diced jalapenos, and cotija cheese (or any Mexican cheese!)! 

Oh, and for this recipe, you can’t forget the cilantro lime crema! Yup. This all results in the most amazing taco! 

What to Serve Tacos With 

If you’re anything like me, you will definitely eat at least 3 tacos in one sitting which is usually enough to fill me up. However, if you’re the type to want to have something on the side, here are a few options! 

Cilantro Lime Rice – This is a great option! Simply cook rice according to box instructions, add 1 tbsp of butter, the juice of ½ of a lime and chopped cilantro. Add salt to taste and enjoy!

Black or Pinto Beans – I love beans so much, you guys! I would recommend either black or pinto beans as an accompaniment to this recipe. My favorite way to eat beans is to add them to the microwave (or pot in the stove) to warm them up. When they’re warm, add in a handful of cheese and stir until the cheese is combined and melted in. Cheesy beans, y’all. They’re lifechanging. 

Chips and Homemade Salsa – You can’t have tacos with chips and salsa, you guys! I highly recommend making my homemade salsa recipe. It is just the best and most fresh option to pair with these tacos!

Chorizo Tacos with Cilantro Lime Crema

Ingredients

  • 1 lb fresh ground chorizo
  • 12 corn tortillas
  • 1 tsp olive oil
  • red onion, jalapeno, cilantro, cotija cheese for topping

Cilantro Lime Crema

  • 3/4 cup sour cream
  • 1 cup roughly chopped cilantro leaves (not the stems!)
  • 1/2 lime juiced (use the whole lime for extra tartness if desired!)
  • 1 tsp garlic powder
  • pinch of salt to taste

Instructions

  1. In a large skillet, add 1 tsp of olive oil. Let it heat up on medium heat. Add the chorizo in and cook for 7-9 minutes or until done.

  2. While the chorizo is cooking, roughly chop up some cilantro. Add the cilantro, sour cream, juice of 1/2 lime, garlic powder and a pinch of salt to the food processor. Pulse until this is creamy and smooth - it's okay if there are still some small pieces of cilantro in it.

  3. Taste and adjust seasoning if needed (add more salt, lime etc.)

  4. Dice up your favorite taco toppings - for me, I love to do diced red onion, jalapeno, extra cilantro, cotija etc. Set aside.

  5. By now, the chorizo should be done! Warm the corn tortillas either on the stovetop or in the microwave (highly recommend stovetop for the char!)

  6. Assemble the tacos! Add a generous portion of chorizo in each taco, followed by a drizzle of the cilantro lime crema and all of your favorite toppings. Enjoy!
