You guys know that I am all about easy, no fuss desserts. I mean, it was a true miracle when I decided to make my own Homemade Banana Pudding instead of buying the boxes of pudding mix. Which, by the way, I will never go back to after tasting the amazingness of homemade pudding.
Why These Are The Best Summer Treat:
I’ve always loved Rice Krispy Treats. I remember getting them as a treat at school. They came in that shiny blue wrapping paper – you opened it up and you always, ALWAYS got the sweetest, most deliciously crunchy but not overly aggressive crunchy bite of the sweetest marshmallow-y morsel of your life.
These are EVEN BETTER. You still get the marshmallow goodness but instead, you combine melty chocolate, graham cracker pieces and drizzle chocolate on top!
It’s ultra decadent and SO very delicious!
I love these in particular because they are so super simple to make. I’m all about no bake recipes with easy ingredients that I already have in my pantry, not a lot of prep or many steps to prepare it.
And this recipe checks off ALL of those boxes.
The treats are so gooey (hi marshmallows!) crispy from the cereal, loaded with chocolatey goodness and have the best soft yet firm texture. The graham crackers add a caramel sweetness that’s SO extra YUM.
By the way, I feel like I should just warn you, this recipe is easy BUT you are going to do a small workout when you’re stirring in the ingredients into the melted butter/marshmallow mixture.
But, the way I think about it is that you’re just working up an appetite and also since you just did basically a WORKOUT then the rice krispy treats cancel each other out. Yup, #basicscience.
Y’all probably know the basic recipe and the ingredients you will need for regular Rice Krispy Treats but let me give you a quick reminder:
Ingredients You Need:
- Rice krispies cereal
- CHOCOLATE CHIPS! You can use semi sweet/dark/milk chocolate chips (whichever you prefer!)
- Mini marshmallows
- Salted butter (aka the love of my life)
- Graham crackers
- Vanilla extract
You more than likely already keep these items in your fridge or pantry. But the good news is, if not, they’re all pretty inexpensive and you can find them anywhere!
How To Make Them:
First, you’re going to melt your butter in a large pot. And I’m talking about a large pot. Y’all have to be able to fit an entire bag of marshmallows and a lot of other ingredients, so it needs to have the capacity to do that without spilling over the sides as you stir it all together.
So. Melt down that delicious butter. Next, add in the bag of marshmallows. You want to combine them very well – to get them to the consistency of marshmallow fluff. It should look something like this:
Once that’s all done, add in your rice krispy treats and vanilla extract. Stir to combine and of course, try a bite because you deserve it.
Add in the chocolate chips and graham crackers next. I didn’t want to just finely crush graham crackers crumbs , I wanted to make sure to add a mixture of texture – so I had some crumbs, small and medium size pieces. Feel free to crush them up however you’d like!

Stir, stir, stir until all of the ingredients are fully combined. You want to make sure the chocolate is evenly distributed as well as the marshmallow/butter mixture. Make sure that nothing is stuck on the bottom of the pan – make sure everything is just ALLLL mixed together in delicious rice krispy treat harmony.
Next, you’re going to line a baking dish with parchment paper and transfer the rice krispy treats into it. It’s going to seem like a lot at first. Like, how the heck am I ever going to smash this down to fit in this pan?! But I promise you, it’ll work! Plus it makes these babes extra thick.
See? If I can do it, you can too.
After that, let them cool for about an hour and then and you’re all set! I sliced mine to make sure they would be super large and thick because go big or go home right?!
To go the extra mile, melt some chocolate (it helps if you add a little bit of coconut oil to make it super melty/shiny!), drizzle it on top, add a few more marshmallows and finally, add some finely crushed graham cracker crumbs. A pinch of flaky salt works amazing too!

I definitely recommend that you actually use chocolate chips instead of just using Cocoa Krispies. It really gives it such a depth of flavor that wouldn’t be there with artificially flavored chocolate cereal. Not to mention, the chocolate chips make these so extra chocolate-y.
Can I make these a day ahead?
Sure! Just make sure that they are stored in a tightly sealed container until devouring!
How do I store these?
You can store them at room temperature, covered, for a few days.
Anything else I need to know?
Just know that these are wonderfully delicious, melt in your mouth, chewy and chocolatey. Also know that you will most likely eat your weight in “trying” it before it’s actually done. You know, one must taste test! Enjoy!!

Chocolate S'mores Rice Krispy Treats
These Chocolate S'mores Rice Krispy Treats are loaded to the brim with chocolate, cocoa flavor and deliciousness! Made with simple ingredients: marshmallows, rice krispies, butter, chocolate chips, and graham crackers!
Ingredients
- 8 tbsp salted butter
- 4 heaping cups of rice krispy cereal
- 4 cups mini marshmallows (about one 10.5 oz bag will be used when all is said and done!)
- 1 tsp vanilla extract
- 1 cup chocolate chips
- 2/3 cup graham crackers, broken into small/medium sized pieces
- 1/4 cup melted chocolate chips
- handful more of marshmallows for garnish
- finely crushed graham cracker crumbs for topping
Instructions

Using a large pot, melt your butter on medium heat. Add in about 4 heaping cups of mini marshmallows and stir quickly, making sure to combine the two. It should resemble a marshmallow fluff when you're done.

Once they are combined, add in your rice krispy cereal and vanilla extract. Stir stir stir until combined. When combined, add in your chocolate chips and graham cracker pieces and stir further, until the chocolate is incorporated fully.

Take the pot off of the heat. Grease or line a baking dish with parchment paper and then add the mixture. Firmly press the mixture down, making sure it's evenly spread.

Let cool for about 1 hour. Slice into thick pieces and enjoy! If desired, add a handful of marshmallows on top of each piece and then melt about 1/4 cup of chocolate chips until smooth and then drizzle on top of the pieces. Top with crushed graham cracker crumbs. Enjoy!
Recipe Notes
For the chocolate in this recipe, feel free to use semi-sweet, dark or milk chocolate chips. I preferred dark!
If you want to melt your chocolate and make it extra smooth, add a bit of coconut oil to the mixture before you put it in the microwave to melt it.
